Em's Arugula Salad with Mango image

If you like arugula, you'll love this salad with mango! Simple, fast, and good for you. Great for a refreshing side dish or a light summer dinner.

¼ cup lemon juice
¼ cup olive oil
2 tablespoons apple cider vinegar
1 tablespoon Dijon mustard
1 teaspoon agave nectar
1 dash garlic powder
1 large mango, cubed
1 avocado, diced
¾ cup roasted, salted macadamia nuts
5 cups arugula
ground black pepper to taste

Steps:

  • Mix lemon juice, olive oil, vinegar, mustard, agave, and garlic powder together in a bowl.
  • Toss mango, avocado, and macadamia nuts together in a separate bowl; pour in the dressing. Place salad on top of arugula. Toss when ready to serve and season with pepper.
