MINI CRAB CAKES WITH MUSTARD CREME FRAICHE



Mini Crab Cakes with Mustard Creme Fraiche image

1/4 cup creme fraiche
1 tablespoon whole-grain mustard
1 teaspoon Dijon Mustard
1/8 teaspoon seafood seasoning, such as Old Bay
2 slices white sandwich bread
1 pound jumbo lump crabmeat, picked through for bits of shell
1/4 cup mayonnaise
1 tablespoon lemon zest, plus lemon wedges, for serving
1 teaspoon Worcestershire sauce
1/2 teaspoon seafood seasoning, such as Old Bay
1/8 teaspoon cayenne pepper
2 scallions, finely chopped
Kosher salt and freshly ground black pepper
1 large egg, beaten
3 tablespoons unsalted butter
1 tablespoon chopped chives, for garnish

Steps:

  • For the mustard creme fraiche: Mix together the creme fraiche, whole-grain mustard, Dijon and seafood seasoning in a small bowl and refrigerate until ready to serve.
  • For the mini crab cakes: Pulse the bread in a food processor to make coarse breadcrumbs; transfer to a large bowl. Add the crab, mayonnaise, lemon zest, Worcestershire, seafood seasoning, cayenne, scallions, 1/4 teaspoon salt and a few grinds of pepper. Mix gently to combine. Add the egg and mix gently but thoroughly. Roll the mixture into about 15 golf ball-sized rounds, then arrange them on a foil-lined baking sheet and flatten them slightly. Refrigerate at least 30 minutes to set.
  • Melt the butter in a large nonstick skillet over medium heat. Cook the crab cakes, in batches if necessary, turning once, until golden brown on both sides and heated through, 3 to 4 minutes per side.
  • Arrange the crab cakes on a serving platter and serve with the mustard creme fraiche dolloped on top or in a small bowl on the side. Sprinkle with the chives and serve with lemon wedges.

I love these little balls because not only are they delicious, they are about as easy as they can be! Best (IMHO) with snow crabmeat (I use Wakefield's frozen) they are also delish with imitation crab. Amount varies on the size of the crab balls. 1 6 oz. package frozen snow crabmeat
1 8-oz. package cream cheese, softened
1 - 3 tsp green onions or chives, finely chopped
1/4 tsp garlic powder
1/4 tsp salt
1/2 c chopped pecans

Steps:

  • 1. Thaw and drain snow crab (or fake crab). Blend together softened cream cheese, chives, garlic powder and salt. Fold in crabmeat. Shape into tiny balls. Roll in chopped pecans.*I usually mix some of the pecans in with the crab mixture, and coat with the rest. :) Serve on toothpicks, or alongside crackers.

CRUSTY CRAB POINTS

6 ounces crabmeat
1/2 cup butter, softened
1 (5-ounce) jar sharp Cheddar cheese spread
1/2 teaspoon mayonnaise
1/2 teaspoon seasoned salt
1/2 teaspoon garlic salt
3 English muffins, sliced in half

Steps:

  • When using canned crabmeat, drain. Combine all ingredients except English muffins with electric mixer. Spread on English muffin halves. Freeze for 1-1 1/2 hours. Cut each muffin half into 6 wedges. Refreeze in plastic bags until ready to serve. Broil until golden brown and bubbly, about 5 minutes. Serve immediately. Filling is also good on party rye, or leave the English muffin halves uncut and serve as open-faced sandwiches.

1/4 cup mayonnaise or salad dressing
1 small clove garlic, finely chopped
1 can (6 oz) crabmeat, well drained, flaked
1/4 cup finely chopped celery
2 tablespoons diced red bell pepper
2 medium green onions, thinly sliced (2 tablespoons)
1/4 teaspoon seafood seasoning (from 6-oz container)
4 slices whole wheat bread, toasted
Chopped fresh parsley

Steps:

  • In medium bowl, mix mayonnaise and garlic. Stir in crabmeat, celery, bell pepper, onions and seafood seasoning.
  • Top toasted bread with crab mixture. Cut diagonally into quarters. Sprinkle with parsley.
