Radicchio and Citrus Salad with Preserved Lemon image

This puréed lemon dressing-with olive oil, miso, and honey-is the ideal base note for a salad of pleasantly bitter radicchio, endive, and sweet oranges.

Preserved-Lemon Purée:
1/4 preserved lemon, seeds removed, chopped
6 tablespoons mild miso (such as white or yellow)
1/4 cup olive oil
3 tablespoons honey
2 tablespoons fresh lemon juice
Kosher salt
Salad and assembly:
1/3 cup blanched hazelnuts
4 oil-packed anchovies
1 garlic clove
Kosher salt
1/4 cup olive oil
2 tablespoons fresh lemon juice
Freshly ground black pepper
2 heads of radicchio (such as Castelfranco, Treviso, and/or Chioggia), leaves separated, halved if large
1 red endive, leaves separated
1 small Meyer lemon, thinly sliced, seeds removed (optional)
2 cups peeled orange rounds (such as Cara Cara, blood, and/or mandarins)

Steps:

  • Preserved-Lemon Purée:
  • Purée preserved lemon, miso, oil, honey, and lemon juice in a blender until smooth; season with salt.
  • Salad and assembly:
  • Preheat oven to 350°F. Toast hazelnuts on a rimmed baking sheet, tossing once, until golden brown, 8-10 minutes. Let cool, then cut in two.
  • Chop anchovies and garlic on a cutting board. Sprinkle lightly with salt and mash to a paste with the side of a chef's knife. Mix in a large bowl with oil and lemon juice; season dressing with salt and pepper. Add radicchio, endive, and Meyer lemon and toss to coat; taste and season with more salt and pepper as needed. Add orange rounds and half of hazelnuts; toss once to combine.
  • Spread half of preserved-lemon purée onto a large platter (save remaining purée and use as a sandwich spread or a dressing for roasted vegetables). Top with salad; scatter remaining hazelnuts.

Finely chopped lemon mixed with grainy mustard, sugar, and olive oil makes a stellar dressing for this radicchio-and-mint salad.

1 head radicchio (10 ounces), broken into individual leaves
1 small lemon
1 teaspoon whole-grain mustard
1/2 teaspoon sugar
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
1 cup packed fresh mint leaves

Steps:

  • Tear radicchio into bite-size pieces; soak in ice water 20 to 30 minutes. Drain well and spin dry.
  • Meanwhile, using a sharp knife, remove peel and pith from lemon. Quarter lemon lengthwise and discard center membrane and seeds; finely chop. Place in a large bowl, and stir in mustard,sugar, and oil to combine. Season with salt and pepper. Toss radicchio and mint with dressing, season with salt and pepper, and serve.

GRILLED MARINATED TUNA WITH RADICCHIO BALSAMIC AND MEYER LEMON



Grilled Marinated Tuna with Radicchio Balsamic and Meyer Lemon image

6 ounces albacore or ahi tuna
2 ounces white wine
3 sprigs thyme
Salt and pepepr, to taste
1 small head radicchio, cut into 4 wedges
2 tablespoons olive oil, plus more for cooking
1 slice pancetta
5 green pitted olives
1 tablespoons balsamic vinegar
1 wedge Meyer lemon, (1/4 lemon)

Steps:

  • Slice the tuna in three thin paillards and marinate in the white wine, thyme, salt, and pepper. Lightly coat the radicchio wedges in salt, pepper and olive oil and grill until tender and slightly charred. Grill the pancetta until caramelized and crispy. Dice and set aside. Place radicchio in a bowl with the pancetta, green olives, balsamic and a drizzle of olive oil and toss to coat. Grill the lemon wedge. Grill the paillards of tuna on one side only until cooked to medium rare. Place radicchio salad in the center of the plate then add the tuna. Garnish with a drizzle of the marinade and top with the grilled lemon.

SEA SCALLOP SALAD WITH MEYER LEMON AND POMEGRANATE



Sea Scallop Salad with Meyer Lemon and Pomegranate image

1 Meyer lemon, peel on, diced very small (about 1/2 cup)
1 large shallot, finely diced
Salt and pepper
1 tablespoon white wine vinegar
Olive oil
8 large sea scallops (about 3/4 pound)
Small head radicchio or treviso, torn in large pieces
2 small Belgian endives, red or white, leaves separated
Handful of arugula leaves or watercress, optional
1/4 cup pomegranate seeds

Steps:

  • Make the vinaigrette: Put lemon and shallot in a small bowl. Season with salt and pepper, add vinegar, and stir to dissolve salt. Stir in 3 tablespoons olive oil. Taste and correct for salt and vinegar. Set aside at room temperature.
  • Season sea scallops on both sides with salt and pepper. Drizzle with 2 teaspoons olive oil.
  • Place a wide cast-iron skillet over medium-high heat. Add 2 tablespoons olive oil, and swirl to coat bottom of pan. When oil looks wavy, place scallops carefully in pan without crowding. Adjust heat to allow scallops to sizzle briskly. Do not move scallops for at least 2 minutes so that a crisp skin can form.
  • After 2 minutes, check to see how scallops are browning. Adjust heat if necessary (if heat is too high, scallops will blacken instead). It should take 4 to 5 minutes to get a well-browned surface. Turn scallops over with tongs or a small metal spatula, and cook for 2 to 3 minutes more, until firm and cooked through. Remove to a plate lined with a paper towel, keeping scallops browned-side up.
  • Divide radicchio, endive and arugula among 4 large salad plates. Place 2 warm scallops in the center of each plate. Stir vinaigrette vigorously and spoon about a teaspoon on each scallop. Drizzle remaining vinaigrette evenly over each salad. Sprinkle with pomegranate seeds, and serve immediately.

1/4 cup sour cream
2 tablespoons fresh Meyer lemon or regular lemon juice
1 tablespoon red-wine vinegar
1 tablespoon caraway seeds, toasted and coarsely ground
1 1/2 teaspoons coarse salt
3 tablespoons safflower oil
10 cups assorted chicories (such as Belgian endive, escarole, frisee, and radicchio)
1/2 cup hazelnuts, toasted and chopped

Steps:

  • Whisk together sour cream, lemon juice, vinegar, caraway seeds, and salt until combined. Gradually whisk in oil.
  • Place chicories in a large bowl, and toss with vinaigrette until evenly coated. Add nuts, and toss to combine. Vinaigrette can be refrigerated 1 day; let stand at room temperature 30 minutes before dressing salad.
