This is a simple mix for tasty and slightly spicy turkey burgers. Great meal with fries and a green salad. Easy to prep ahead of time. Fast weeknight meal. Serve with any burger toppings you like.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate.
- Mix together ground turkey, shredded cheese, poblano pepper, seasoned salt, and granulated onion in a bowl until thoroughly combined. Divide mixture into 4 portions. Roll each portion into a ball and press into a burger shape.
- Place burgers on the preheated grill and cook, flipping once halfway through, until no longer pink in the center, about 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Serve on hamburger buns topped with mashed avocado.

- In a bowl combine ground turkey, taco seasoning, salt, pepper, and cumin. Mix until well blended.
- Heat a large skillet on medium heat. Add enough olive oil to coat the pan.
- Form 4 patties with the seasoned meat.
- Place burgers in the heated pan. They will take 5 to 6 minutes on each side. If you would like to add cheese, add the cheese a minute or two before the burger is fully cooked.
- In a small bowl combine the chipotle sauce and mayonnaise. Mix until well blended. Let rest five minutes before using.
- If you are using hamburger buns toast them by placing under a broiler and browning the buns.
- Place some Chipotle mayonnaise onto the bun, add the turkey burger, top with pico de gallo.
- Serve with steamed veggies or even re-fried beans.

- Preheat oven to 450 degrees F (230 degrees C). Coat a medium baking dish with cooking spray.
- Heat the olive oil in a skillet over medium heat, and saute the onion, green pepper, and garlic 5 minutes. Remove from heat, and cool slightly.
- In a small bowl, mix the salsa and 1/2 the corn. In a large bowl, mix the onion mixture with the turkey, taco seasoning, and 2 tablespoons of the salsa mixture. Divide into 6 patties, and press into the breadcrumbs to lightly coat on all sides. Arrange coated patties in the prepared baking dish.
- Bake the patties 10 minutes in the preheated oven. Drain any liquid from the dish, turn patties, and spread with the remaining salsa mixture. Continue baking 10 minutes, to an internal temperature of 165 degrees F (75 degrees C).
- Warm the tortillas in the microwave, about 30 seconds on High. Wrap the cooked turkey patties in the warmed tortillas with sour cream and lettuce. Sprinkle with remaining corn to serve.

- Place turkey, onion, jalapeño, and spices together in a large bowl and mix together until all the ingredients are incorporated.
- Lightly wet your hands and use them to shape 4 circular patties about 4 inches (10 cm) in diameter.
- Heat up about 2 tablespoons of vegetable oil in a pan over medium heat.
- Cook burgers for 2 minutes on the first side, then flip, lower heat to low, and cook them for an additional 5-6 minutes. Top with pepper jack cheese during the last minute.
- NOTE: The turkey burgers must be cooked through. Use a meat thermometer to check each patty for an internal temperature of at least 165˚F (75˚C) before removing from pan.
- Assemble the burgers as desired with bun, chipotle mayonnaise, lettuce, tomato, avocado, and preferred condiments.

These are not spicy (feel free to add spice if you like yours that way!) but have a fresh, vibrant flavour that goes well with burger buns or with other sides such as Mexican rice.

- Start the barbecue or preheat the grill.
- Remove the core and seeds from the tomato and finely dice the flesh.
- In a bowl, add to the tomato: the turkey, mexican cheese, paprika and fresh coriander. Mix well.
- Divide the mixture into four and shape into burgers. If you have time, cover and chill in the fridge for 20 minutes to let the flavours blend.
- Place a sheet of foil over the barbecue or grill, or use a baking sheet if preferred- because these burgers are made from a low fat meat, they can break up if not handled carefully, so the foil helps them to stay together. Handle and flip them with care.
- Place the burgers on the barbecue or under a grill, on the foil or baking sheet.
- Cook for 15 minutes, flipping regularly.
- If using a barbecue, remove the foil at this point- after 15 minutes- so the burgers pick up the chargrilled flavour in the next 10 minutes.
- Cook for a further 10 minutes (whether using a barbeque or a grill) or until completely cooked through.
- Serve with salsa if desired, on burger buns, Mexican rice, or whatever takes your fancy!
OAXACAN TURKEY BURGERS WITH CHIPOTLE SALSA
Although you will not find these turkey burgers at a local cantina in Oaxaca, I can vouch that they certainly did conjure up fond memories of the flavors in dishes I ate on some of my many journeys to Oaxaca. I could even imagine these burgers served at one of the open air market's concessions. I tip my hat once again to Steven Raichlen, my grilling hero, for yet another impressively creative and delicious burger. Minus some personal modifications to the recipe, this is the recipe that appeared in Burger. Make Ahead: The salsa makes about 2 cups and can be made ahead of time and stored in the refrigerator in a sealed container for 2 days. Beer Recommendation: A rich malty, roasty beer that absorbs the heat and provides a great counterpart to chipotles and grilled meat is a good choice to pair with these burgers. If you happen to find a Noche Buena, a great dark beer from Mexico, this would be my first choice. Second would be Negra Modelo, a slightly sweet brew with some fruitiness, it's malty for a Mexican beer and goes well with chipotles.

- Chipotle Salsa:.
- Heat a thick cast iron skillet until very hot and add tomatillos, garlic, tomatoes and onion and cook over low heat. Frequently flip until blackeded in small areas and soft, about 10 minutes. Place on plate and set aside to cool.
- Put the tomatillos, garlic, tomatoes and onion in a blender or food processor and pulse until coarsely chopped, be careful not to liquify. Add chipotles and adobo sauce, cilantro, salt and sugar and pulse one or two times until JUST mixed.
- Burgers:.
- Add turkey, cilantro, scallion, garlic, ancho powder, salt, pepper, cumin, coriander and cinnamon to a mixing bowl and gently knead. Form 4 patties about 3/4 inch thick and put on a saran wraped plate.
- Light your grill and when it is heated brush grate with oil. Grill the burgers for 13 minutes, turning once, for medium. Briefly warm the english muffins and place a burger on the bottom slice; top with the avocado, pumpkin seeds and a helping of Chipotle Salsa. Top the burger and serve with the remaining salsa on the side.
