GRILLED BANANAS WITH RUM ICE CREAM AND MEXICAN HOT CHOCOLATE SAUCE

Grilled Bananas with Rum Ice Cream and Mexican Hot Chocolate Sauce image

Yield Serves 4

Number Of Ingredients 15

4 firm-ripe bananas
1/2 stick (1/4 cup) unsalted butter, melted and cooled
1/4 cup firmly packed brown sugar
For rum ice cream:
2 cups heavy cream
2 cups milk
1 vanilla bean, halve lengthwise
a 2-by 1/2-inch piece lemon zest, removed with a vegetable peeler
2/3 cup firmly packed brown sugar
8 large egg yolks
1/4 cup good-quality dark rum such as Bacardi Black
For Mexican hot chocolate sauce:
1/4 pound (about 1 1/2 tablets) Mexican chocolate* such as Ibarra, chopped
1 cup half-and-half
available at some specialty foods shops

Steps:

  • Prepare grill.
  • Peel bananas and halve lengthwise. In a shallow baking pan large enough to hold bananas in one layer stir together butter and brown sugar and add bananas, tossing gently to coat. Transfer bananas with a metal spatula to an oiled rack set 5 to 6 inches over glowing coals and grill until browned and cooked through, about 2 minutes on each side. (If bananas are difficult to handle you may grill them on 1 side only.)
  • Serve bananas like a banana split with ice cream and chocolate sauce.
  • To make rum ice cream:
  • In a 2 1/2- to 3-quart heavy saucepan combine cream and milk. Scrape seeds from vanilla bean into cream mixture, dropping in bean. Add zest and bring mixture just to boil.
  • In a large metal bowl whisk together brown sugar and yolks until combined well. Add hot cream mixture to yolk mixture in a slow stream, whisking, and return custard to pan. Cook custard over moderately low heat, whisking constantly, until thickened and coats back of a wooden spoon, about 3 minutes. (Do not let custard boil or it will curdle.)
  • Pour custard through a very fine sieve into cleaned metal bowl and cool slightly. Stir in rum and chill, covered, until cold. Freeze custard in an ice-cream maker. Makes about 1 1/2 quarts.
  • To make Mexican hot chocolate sauce:
  • In a heavy saucepan heat chocolate and half-and-half over low heat, stirring frequently, until chocolate is melted. (The sauce will have a very thin consistency, like that of hot chocolate.) Serve sauce warm. Makes about 1 cup.

SPICY MEXICAN CHOCOLATE ICE CREAM

Spicy Mexican Chocolate Ice Cream image

This is an excellent chocolate ice cream. It's very rich and creamy. The addition of cinnamon and cayenne turn it up a notch. It's a spicy and exceptionally delicious Mexican treat. This ice cream has heat, and I've been told it's like my Recipe#287655 in ice cream form.

Provided by A.B. Hall

Categories     Frozen Desserts

Time 5h30m

Yield 6 1/2 cup, 6 serving(s)

Number Of Ingredients 11

1 cup heavy cream
1 cup whole milk
1 cup skim milk
2 ounces unsweetened chocolate
1/2 cup unsweetened cocoa powder
1 vanilla bean
2 eggs
1 cup sugar
1/8 teaspoon salt
1 teaspoon cinnamon
1/8 teaspoon cayenne pepper

Steps:

  • Slice the vanilla bean in half lengthwise and scrape the seeds (do not discard), set aside.
  • Roughly chop the chocolate and melt in a medium sauce pan together with milk and cream (over medium heat). After the chocolate has melted, whisk in the cocoa powder, avoiding clumps. Add the vanilla bean and seeds. Bring the mix to just under a boil (150° on a candy thermometer), stirring frequently. Remove from heat and let the mix steep, covered, for 30 minutes to an hour.
  • Remove the vanilla bean. Reheat mix over moderate heat until hot (150 degrees), stirring frequently.
  • Whisk the eggs, sugar and salt together in a small bowl.
  • Temporarily remove the pan from the heat. Add 1/2 cup hot cream mixture to the eggs/sugar in a slow stream, whisking constantly. Whisk the egg/cream mix back into the saucepan and return to medium-low heat, STIRRING CONSTANTLY until a candy thermometer reads 170 degrees (do not let it boil).
  • In a medium to large bowl (that cream mixture will be chilled in) combine the cinnamon and cayenne pepper. Pour a small amount of the chocolate cream through a strainer into the bowl and whisk to combine, avoiding clumps. Pour the remaining chocolate cream mixture through the strainer and whisk to combine.
  • Cool completely in the refrigerator (at least 4 hours). Freeze in an ice cream maker. Transfer to an airtight container and put in freezer to harden.
  • Notes: DO NOT add more than 1/8 tsp cayenne pepper. The flavor intensifies as it freezes in the ice cream maker. If you don't have 1/8 tsp, use 1/4 tsp and remove half the cayenne.
  • Notes: To chill more quickly, place the final mixture in an ice and cold-water bath for 30 minutes (a larger bowl for the ice water, a smaller bowl filled with the cream mixture that will sit in the "bath"). Stir frequently.

1 1/4 cups brown sugar
3/4 cup light corn syrup
2 teaspoons vanilla extract
1/2 cup cream cheese
1/2 teaspoon orange zest
1/4 teaspoon kosher salt
3 large eggs
2 cups pecan halves and pieces
Hot Chocolate, recipe follows
Powdered sugar, for dusting
Creme Fraiche Ice Cream, recipe follows
Candied Orange Zest, recipe follows
Baby sweet potato leaves, for garnish
1/2 cup chopped chocolate (68 percent cacao)
2 cups heavy cream
1/4 cup granulated sugar
1/4 cup corn syrup
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/2 teaspoon ground coriander
1/2 teaspoon kosher salt
1/4 teaspoon ground allspice
Pinch ground cloves
1 dried New Mexican chile, chopped
14 large egg yolks plus 2 large whole eggs
1 3/4 cups granulated sugar
1 1/2 teaspoons kosher salt
1 quart heavy cream
2 cups creme fraiche
2 cups milk
1 orange
1/2 cup raw cane sugar
1 1/2 cups granulated sugar

Steps:

  • For the pie dough: Preheat the oven to 350 degrees F.
  • Place the flour, salt and butter in a food processor and blend until it comes to a pea-size crumble. Dump that mixture out into a bowl and pour 5 tablespoons cold water in. Mix to bind it with your hands just until it comes together, then wrap and let rest for 15 minutes. (Be careful not to overmix your dough to form gluten.)
  • Roll the dough out to 1/8-inch thick on a floured surface, then press into a 10-inch fluted tart pan, being careful to get all the edges pressed into the corners. Using a fork, poke holes in the dough so it doesn't bubble while baking. Gently lay cheesecloth over the top of the tart and pour in 1 cup of pie weights to blind bake the shell. Bake until blond (light golden brown), 18 to 20 minutes.
  • For the filling: Melt the butter in a saucepan and whisk in the brown sugar, corn syrup and vanilla until smooth.
  • Combine the cream cheese, orange zest, salt and eggs together in a stand mixer and beat with the whisk attachment on high speed, stopping to scrape down the sides of the mixer once, until smooth and not lumpy, about 3 minutes. On low speed add your hot sugar and butter mixture to your egg and cream cheese mixture. Fold the pecans into the mixture and fill the tart shell.
  • Bake until set, 12 to 15 minutes.
  • Place the Hot Chocolate on the bottom of a plate in a circular puddle. Dust the top of the tart with powdered sugar, then place over the hot chocolate. Quenelle the Creme Fraiche Ice Cream (form into football shapes) and place it on top of the tart. Garnish with the Candied Orange Zest and potato leaves.
  • Place the chocolate in a large bowl and set aside.
  • Combine the cream, granulated sugar, corn syrup, vanilla, cinnamon, coriander, salt, allspice, cloves and chile in a saucepot and bring to 180 degrees F. Remove from the heat, strain all of the solids out of the cream mixture and pour over the chocolate.
  • Let sit 1 minute, then whisk until it all comes together.
  • Mix together the egg yolks, whole eggs, granulated sugar and salt in a bowl and whisk well.
  • Combine the cream, crème fraiche and milk in a pot over medium heat and bring to 180 degrees F.
  • Temper the hot cream into your egg mixture by adding a small amount of the hot cream to the egg mixture, whisking constantly, then whisking the egg mixture into the hot cream, whisking constantly. Let cool to room temperature, then strain.
  • Pour the custard into the ice cream machine.
  • Run the machine according to its instructions until thick and creamy, about 20 minutes. Remove from the machine and let it set up the rest of the way in the freezer, about 4 hours.
  • Peel zests from the orange with a peeler.
  • Roll the zests up and cut them into chiffonade strips.
  • Mix the raw sugar together with 1/2 cup granulated sugar on a tray and set aside.
  • Stir together the remaining cup granulated sugar with 1/3 cup water in a pot and wipe the sides of the pot down with a wet hand. Bring this solution up to 242 degrees F.
  • Throw the orange zests into the pot and swirl the pot a few times. Take off the heat.
  • Strain through a sieve to retrieve the orange zests. Immediately throw the orange zests into the sugar mixture and toss quickly so that they separate and crystalize in the sugar.
  • Transfer zests to parchment paper and let harden, about 1 hour.

  • Drizzle serving plates with chocolate syrup if desired. Place six tortilla wedges on each plate; top each with a scoop of ice cream. Pipe whipped cream around base and on top of ice cream. Garnish each with a cherry.

MEXICAN DEEP FRIED ICE CREAM

Mexican Deep Fried Ice Cream image

I always get the deep fried ice cream at our local restraunt, but Gordo won't share the recipe with me, but I think this one is better...but don't tell Gordo! I found this online I'm not sure where but I have the blurb from where it originated...appeared in the Milwaukee Journal Sentinel on Oct. 6, 1999. I do recommend that you do everything that's needed the day before according to the recipe.

Time P1DT40m

Yield 12 serving(s)

Number Of Ingredients 14

3 -3 1/2 cups corn flakes
1 gallon vanilla ice cream (about)
12 long cinnamon sticks
3 cups beer
5 1/3 cups flour
1/4 cup sugar
8 eggs, separated
1/4 cup vegetable oil, plus
oil, to fry ice cream balls (divided)
cinnamon sugar (to garnish)
whipped cream (to garnish)
honey (to garnish)
deep fried corn tortilla strips, coated with
cinnamon-sugar mixture (such as Cinnamon Sugar)

Steps:

  • Start this dish one day before serving it.
  • To make ice cream balls, put cornflakes in shallow dish.
  • Form about 12 ice cream balls with your hands, using 4 to 5 ounces of ice cream.
  • Each ice cream ball should be about the size of a baseball.
  • Roll balls in cornflakes until thoroughly coated.
  • This will provide insulation from the heat. Insert 1 cinnamon stick into each ice cream ball, then place on cookie sheet.
  • Cover tightly with plastic wrap and freeze overnight.
  • Ice cream must be rock hard in order to prepare this dish.
  • Open beer and let sit out overnight to become flat.
  • On the second day, make batter.
  • Mix flour and sugar in large bowl. In another bowl, combine egg yolks with 1/4 cup oil and 3 cups flattened beer.
  • Mix well.
  • In another bowl, beat egg whites until stiff peaks form.
  • This is best to do in copper bowl.
  • Combine beer and flour mixtures; mix until thick dough is formed.
  • Fold in egg whites.
  • Batter should be thick, but if it is elastic dribble more flat beer into it and mix until desired consistency is achieved.
  • If batter is too thin, it won't stay on the ice cream ball.
  • Batter is good for three days, but may separate.
  • If it separates prior to use, whisk to desired consistency.
  • To prepare, put 6 inches of oil in deep fry pan or large pot and heat to 375 degrees. Gently coat ice cream ball with batter, being careful not to pull cinnamon stick out of ball.
  • When balls are coated, gently drop into oil, one at a time, being careful not to let balls stick to sides of pan or frying basket. Submerge balls completely by holding onto cinnamon stick.
  • Balls are done when golden brown, about 1 to 11/2 minutes.
  • As ice cream balls are fried, set each aside to drain on multiple thickness of paper towels until all are done.
  • Before serving, pour honey over top of each ball, then sprinkle with cinnamon sugar and pipe whipped cream around the base.
  • Serve immediately with tortilla chips.
  • Makes 12 servings.

Number Of Ingredients 5

6 ounces Mexican chocolate, chopped
3/4 cup (6 ounces) heavy cream
6 whole graham crackers
1 cup candied walnuts, roughly chopped
1 pint dulce de leche ice cream

Steps:

  • For the ice cream sandwiches: Break the graham crackers in half. Put the candied walnuts on a small plate. Turn the pint of ice cream on its side and use a serrated knife to slice through the carton, creating 6 ice cream discs. Spread some of the Mexican chocolate ganache on each graham cracker half. Add an ice cream disc (remove the carton) to 6 of the graham cracker halves and top with the remaining graham crackers. Roll the edges in the candied walnuts. Serve immediately.
