2 lbs lean ground beef
1 small chopped onion
2 medium eggs
1 cup soft white breadcrumb
1/2 cup chopped fresh parsley
1/2 cup dry red Burgundy wine
1 tablespoon chopped fresh basil
1 1/2 teaspoons salt
1/4 teaspoon pepper
5 slices bacon
1 bay leaf
1 (8 ounce) can tomato sauce & mushrooms, heated

Steps:

  • In a large bowl, combine ground meat, onion, eggs, bread crumbs, parsley, wine, basil, salt and pepper.
  • Mix well.
  • On a 12 inch square piece of aluminum foil, crisscross 3 bacon slices.
  • Shape meat mixture into a 6 inch round and place on top of bacon.
  • Top meatloaf with remaining bacon slices, cut in half.
  • Place bay leaf on top of bacon slices.
  • Lift foil with loaf into slow cooker; cover.
  • Cook on High for 1 hour, turn heat to low and cook 4 more hours or until meatloaf is done.
  • Remove loaf from slow cooker by lifting the foil, titling fat back into the crockpot.
  • Discard bacon and bay leaf.
  • Serve with heated tomato sauce poured over it.

2 pounds ground beef (top round or sirloin)
1 pound ground veal
1 pound ground pork (or just use all ground beef)
1 cup cottage cheese
1 cup bread crumbs
1 cup chopped onion
½ cup chili sauce
3 eggs, beaten
3 tbsp chopped green pepper
Salt and pepper to taste
½ cup Burgundy wine
1 cup tomato sauce

Steps:

  • Combine beef, veal and pork and mix thoroughly. Add cottage cheese, bread crumbs, onion, chili sauce, eggs and green pepper. Season to taste with salt and pepper. Shape into a loaf and place in a roasting pan. Pour wine over meatloaf and spread tomato sauce on top. Bake at 400 degrees for 30 minutes, basting frequently with pan juices. Reduce heat to 350 degrees and bake 30 minutes more.

2 eggs, beaten
1 c. soft bread crumbs
1 onion, chopped
1/2 c. Burgundy wine or beef broth
1/2 c. fresh parsley, chopped
1 T. fresh basil, chopped
1-1/2 t. salt
1/4 t. pepper
5 slices bacon, divided
1 bay leaf
8-oz. can tomato sauce, warmed

Steps:

  • Combine ground beef, eggs, bread crumbs, onion, wine or broth and seasonings in a large bowl; mix well and set aside. Criss-cross 3 bacon slices on a 12-inch square of aluminum foil. Form meat mixture into a 6-inch round loaf on top of bacon. Cut remaining bacon slices in half; arrange on top of meatloaf. Place bay leaf on top. Lift meatloaf by aluminum foil into a slow cooker; cover and cook on high setting for one hour. Reduce to low setting and continue cooking, covered, for an additional 4 hours. Remove meatloaf from slow cooker by lifting foil. Place on a serving platter, discarding foil, bacon and bay leaf. Spoon warmed tomato sauce over sliced meatloaf. Serves 4 to 6.
