GENUINE HAWAIIAN TERIYAKI SAUCE
Easy to make, last weeks and tastes delicious! You will find yourself putting this on almost anything once it's in your refrigerator.

Steps:
- Mix soy and sugar in small sauce pan over low heat just enough to dissolve sugar. Remove from heat and add remaining ingredients.
- Let cool and store in a glass jar in refrigerator.
- A light inexpensive soy works well for this, just make sure it is real not one with caramel coloring as an ingredient. Tamari is a bit too heavy for this, though will work in a pinch.
- I use my parmesan cheese grater to grate ginger--comes out well that way.
- This is also great on noodles, tofu, vegetables, added to stir frys, besides grilled meats and burgers.

HAWAIIAN TERIYAKI SAUCE
There is regular teriyaki sauce, and then there is Hawaiian Teriyaki Sauce (which is also called Hawaii-Style Teriyaki Sauce and Local Teriyaki Sauce). This Hawaii version is super easy to make, all you need is soy sauce, sugar, and ginger!

Steps:
- Combine the soy sauce, sugar, and grated ginger in a small saucepan. Bring to a boil, and then simmer for 10 minutes.
- Remove from heat and pour the sauce into a glass jar. Let cool, cover and store in the fridge. Use as needed (see notes below).
MAHI MAHI WITH TERIYAKI SAUCE MARINADE

Steps:
- Melt 1 Tblsp. butter over low heat. Add garlic. Saute garlic until tender. Remove from heat.
- Stir in teriyaki, lemon juice, honey and sesame seeds.
- Pour over fish and marinate for at least 30 minutes.
- Heat 1 Tblsp. butter in pan at medium heat.
- Add fish, saute 4-5 minutes on each side, basting with marinade.
- Garnish with parsley.
HAWAIIAN TERIYAKI MARINADE
This is a true taste of Hawaii! I got this recipe from an island boy when I lived there. This marinade always takes me back to the islands. Enjoy!

- 1. Mix all ingredients in a bowl. Pour into an airtight zip-lock bag over desired meat. Marinate for at least 3 hours. This is excellent with pork tenderloin, chicken or beef. It makes THE BEST teriyaki chicken wings for the big game.
KELLY'S KIHEI, MAUI TERIYAKI SAUCE
This is a recipe that we used growing up on Maui. We mostly used it to marinade chicken or beef short rips and then grill the. Because of the sugar content, like barbecue sauce, be careful because it burns easily. I always cook on the grill using indirect heat.

Steps:
- Grate ginger root, crush garlic, and dice scallion. Mix all ingredients together until sugar dissolves pretty well.
- Marinade your choice of meat (I use a ziplock bag) for at least 4 hours, but better overnight.
- Grill and enjoy! Serve "local style" with sticky rice and macaroni salad! Note: preparation time does not include marinating time!
