APPLE YAM CASSEROLE
What Americans call yams are actually a variety of sweet potato. Fragrant sweet potatoes layered with Granny Smith apples and topped with a sweet mixture of brown sugar and raisins make this a great recipe for all holidays, but best for Thanksgiving and Christmas.

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 2 quart casserole dish.
- In the casserole dish, alternately layer the sweet potatoes and apples.
- In a medium saucepan over medium heat, mix together brown sugar, 1/3 cup water, cinnamon, raisins, butter and salt. Cook 5 minutes.
- In a small bowl, stir together remaining water and flour. Combine with the brown sugar mixture. Pour over the sweet potatoes and apples. Place the lemon slices on top.
- Bake covered in the preheated oven 20 minutes. Uncover and continue baking 20 minutes, or until the sweet potatoes and apples are tender.

SMUSHED APPLES AND SWEET POTATOES
This is a super simple recipe that I make as a sweet, easy side dish. It tastes a LOT like apple pie... but even healthier!

Steps:
- Place the sweet potato in a medium saucepan and fill with enough water to cover the potatoes. Bring to a boil, reduce heat to medium, and simmer for about 20 minutes or until tender. Remove from heat, drain and set aside.
- Melt butter over low heat in a small saucepan. Mix in the sugar, cinnamon and allspice. Add the apple slices, cover, and let simmer for 5 minutes, or until the apples are tender. Mix the apple mixture into the drained sweet potatoes along with the milk. Mix well using an electric mixer or just a fork until potatoes are mashed.

- Place yams in a large saucepan with enough water to cover. Bring to a boil, and cook 30 minutes, or until tender but firm. Drain, peel, and cut into 1/3 inch thick slices.
- Preheat oven to 375 degrees F (190 degrees C). Lightly grease a 9x13 inch baking dish.
- In a small saucepan over medium heat, melt the butter with the cornstarch and brown sugar. Mix in the apple juice, lemon juice, cinnamon, and allspice.
- Alternate layers of yams and apples in the prepared baking dish. Pour the apple juice mixture over the layers.
- Cover, and bake 1 hour in the preheated oven. Remove cover, and continue baking 30 minutes. Baste frequently with the juices from the pan to prevent drying.

- Preheat oven to 350°F. Boil yams in pot of boiling salted water until tender, about 20 minutes. Add apple; cook until tender, about 5 minutes. Drain well. Place yams and apples on large baking sheet. Bake until slightly dry, about 10 minutes. Blend yams and apple in processor until smooth. Add butter and spices; blend until butter melts. - Melt butter in an oven safe casserole.
- Add the brown sugar and cinnamon.
- Mix well.
- Add the apples and potatoes.
- Stir well to thoroughly coat with the caramel mixture.
- Cover with a lid or foil and bake at 375 for 30 minutes, stirring once halfway through.
- After 30 minutes, remove the cover, stir again, and bake for 10 more minutes, or until caramel is thickened and the potatoes are tender.

I found this in an old church cookbook. The only change I made is instead of using a can of yams, I cook 6 yams and use those instead as I prefer fresh over canned yams.

- Combine brown sugar and cinnamon.
- Toss apples and nuts with the brown sugar mix.
- Alternate layers of apples and yams in a 2 quart casserole dish.
- Dot with butter between each layer.
- Cover and bake at 325 degrees for 30 minutes.
- Uncover and bake for an additional 30 minutes.
- Remove and sprinkle top with marshmallows.
- Place back in oven on "broil" until marshmallows are lightly browned.
