ROASTED, SMASHED AND LOADED POTATOES

- Preheat the oven to 450 degrees F. Adjust the oven racks to the top and bottom positions.
- Place the potatoes on a sheet pan, pour 3/4 cup water over the potatoes and cover tightly with foil. Bake on the bottom rack until tender, about 30 minutes. Remove from the oven, drain any remaining water and let rest 8 minutes.
- Drizzle 3 tablespoons oil over the potatoes, making sure they are evenly coasted. Space the potatoes evenly on the sheet pan and, using a potato masher, flatten the potatoes to about 1/2 inch thick (about 1/2 the length of your thumb to the first joint). Sprinkle with salt and pepper. Drizzle the remaining 3 tablespoons olive oil over the potatoes and roast on the top rack for 15 minutes. Remove from the oven and sprinkle with the cheese. Roast on the bottom rack until golden brown, about 20 minutes. Remove from the oven and top with the sour cream and scallions. Serve immediately.

- Remove papery outer skin from garlic (do not peel or separate cloves). Cut tops off garlic bulbs. Brush with oil. Wrap each bulb in heavy-duty foil., Bake at 425° for 30-35 minutes or until softened. Cool for 10 minutes., Meanwhile, in a large skillet, cook bacon over medium heat until crisp. Remove to paper towels; drain, reserving 2 tablespoons drippings. In the same skillet, cook onions in reserved drippings for 2 minutes or until tender; set aside. Crumble bacon., Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 10-15 minutes or until tender. Drain and transfer to a large bowl., Mash potatoes. Squeeze softened garlic over top. Stir in the bacon, onions with drippings, sour cream, 1 cup cheese, butter, milk, salt and pepper; combine. Spoon mixture into a greased 13x9-in. baking dish; top with remaining cheese., Bake, uncovered, at 350° for 10-15 minutes or until cheese is melted. Garnish with chives if desired.

- Whisk sriracha, soy sauce, sugar, sesame oil, and ginger in a medium bowl until sugar is dissolved. Pour about a third of sauce into a gallon-sized resealable plastic bag and add wings. Seal bag, pressing out air, then toss to coat wings. Chill at least 4 hours and up to 24. Cover remaining sauce and chill.
- Boil potatoes in a pot of salted water, starting from cold, until fork tender, 15 to 20 minutes. Drain and let cool, then smash with the palm of your hand or the bottom of a glass to flatten gently. Chill until ready to use.
- Preheat oven to 350 degrees. Line a large rimmed baking sheet with aluminum foil. Build separate foil trays by folding a large piece of foil in half, and folding up the edges to create three trays; one taking up about 1/2 of the sheet to hold the nachos, and 2 smaller trays to hold the wings and smashed potatoes.
- Remove wings from bag, allowing excess marinade to drip off, and arrange in one of the small foil trays, spacing evenly. Toss smashed potatoes with olive oil in the other small foil tray and season with salt and pepper. Spread out potatoes; place in oven along with wings. Bake until wings are cooked through and tender at the bone, and potatoes are browned on the bottom, 25 to 30 minutes.
- While wings and potatoes are roasting, cook bacon in a dry medium skillet over medium, turning occasionally, until crispy, 8 to 10 minutes. Drain on paper towels and coarsely chop; set aside.
- Remove baking sheet from oven and increase temperature to 450 degrees F. Turn potatoes so they're browned-side up and use a brush to baste wings with half of remaining ginger sauce.
- Arrange 1/2 the tortilla chips on open half of baking sheet. Toss cheeses together and sprinkle half over top of chips. Scatter remaining chips and cheese in a second layer over top. Tent chips with more foil, then place baking sheet back in oven. Bake until cheese is melted and wings are browned and crispy in spots, 5 to 8 minutes.
- Remove from oven and let cool slightly. Drizzle wings with remaining ginger sauce, then sprinkle with sesame seeds and scallion. Scatter red onion, tomatoes, jalapenos, and cilantro over nachos. Place a dollop of sour cream over each smashed potato, then top with bacon and chives. Season with more salt and pepper and serve.

FLANK STEAK WITH LOADED SMASHED POTATOES RECIPE

- Serves 6 1. Pat steak dry with paper towels and season with salt and pepper. Cook bacon in 12-inch nonstick skillet over medium heat until crisp, about 8 minutes. Using slotted spoon, transfer bacon to paper towel-lined plate. Pour off all but 1 tablespoon fat from pan. Cook steak over medium-high heat in now-empty skillet until well browned and meat registers 120 to 125 degrees (for medium-rare), 5 to 7 minutes per side. Transfer to cutting board, tent loosely with aluminum foil, and let rest for 5 minutes. 2. Meanwhile, microwave potatoes and oil in large covered bowl until tender, 10 to 12 minutes. Add sour cream and, using potato masher, mash until combined. Stir in cheddar, bacon, and scallions. Season with salt and pepper to taste. Slice steak thinly against grain and serve with potatoes.

- 1. Cook Salt Potatoes following the directions on the bag. If you do not have pre-packaged salt potatoes, boil small potatoes in heavily salted water, the usual ratio is (1)one cup of salt to (6)six cups of water. Place potatoes in the pot and bring to a boil, reduce heat and simmer until potatoes are tender but firm.
- 2. Using a potato masher flatten the cooked potatoes. Really there is not much else to say, no fancy foodie term. Just straight-forward potato flattening.
- 3. Arrange your now smashed potatoes in a oven safe baking dish, pack them in tightly so they completley cover the bottom of the pan, I also sprayed my pan with cooking spray, so the cheese would not stick. The size of the dish you use will depend on how many potatoes you have left over. I used two pie sized pans, so the kids could fix up their own potatoes and I would not have to hear, "I don't like all that junk".
- 4. Bake in a 450 degree pre-heated oven, until the potatoes are hot and the edges are golden and crispy. About 20 minutes, for the sized pans I used.
- 5. Once the potatoes are hot and crispy, sprinkle the potatoes with the shredded cheddar cheese and crumbled bacon. Put back into the oven until the cheese is melted, don't go anywhere it happens quick!
- 6. Once the cheese is melted, remove your potatoes from the oven, immediatly sprinkle all the yummy toppings on you would like. We used cherry tomatoes, diced sweet onion, pickled sliced jalapeno pepper, and sliced black olives. Serve hot with sour cream!

- Fill large pot with warm water. Place on stove over high heat and salt water. Bring to rolling boil.
- Rinse potatoes and pat dry. Cut potatoes into 1/8th and drop into water.
- Cook potatoes until they are fork tender.
- Drain potatoes and place back in cooking pot, return to burner.
- Add Sour cream, chopped green onion, Cheese, half and half, and seasoning.
- Mash potatoes but leave some good sized chunks.
- Enjoy!

LOADED SMASHED NEW POTATOES
Here's a new twist on new potatoes. I've been seeing and hearing about smashed potatoes and decided to try my hand at it. I was not disappointed. I watched a video some time ago by Rachael Ray (I think) that inspired me to make these. Hers were simply smashed, seasoned and fried. I decided to "load" mine. These were a big hit for lunch today with our Slow Cooker Pulled Pork BBQ sammies. Hope you enjoy! Photo's are mine.

- Boil potatoes until just tender, about 15 to 20 minutes depending on size of potato; drain water off.
- Heat white truffle oil over a medium heat in a 10-inch or larger frying pan until hot.
- With the back of a spatula, press potatoes flat being careful to not flatten to much (be careful in handling, you don't want to burn your hands); transfer potato patties to frying pan. Sprinkle with salt and pepper to taste.
- Fry to a golden brown on both sides (flipping only once). Once you flip, season with salt and pepper again.
- Place about a tablespoon of shredded cheese on each smashed potato. Once cheese begins to melt, transfer to serving plate. If desired, add bacon and a dollop of sour cream; spinkle with chives. Serve!
