1 teaspoon unsalted butter, or as needed
2 skinless, boneless chicken breasts, cubed
3 cups finely chopped broccoli
2 (10.5 ounce) cans condensed cream of chicken soup
1 cup shredded Cheddar cheese
1 cup shredded Parmesan cheese, divided
½ cup shredded mozzarella cheese
½ cup sour cream
ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Butter the bottom and sides of a 9x13-inch dish.
  • Bring a pot of water to a boil. Add chicken and continue to boil until no longer pink, 5 to 10 minutes.
  • Meanwhile, combine broccoli, cream of chicken soup, Cheddar cheese, 1/2 cup Parmesan cheese, mozzarella cheese, sour cream, and pepper in a large bowl. Mix well.
  • Drain chicken and add to broccoli mixture. Mix well. Pour into the prepared baking dish and spread evenly.
  • Bake in the preheated oven for 20 minutes. Add remaining Parmesan cheese on top and continue to bake until cheese is melted, 3 to 5 minutes.

1 cup long grain rice
¼ teaspoon black pepper
½ teaspoon onion powder
1 can cream of chicken
1 cup shredded cheddar cheese
2 cups broccoli, diced
1 ½ cups chicken broth
cheddar cheese, for topping

Steps:

  • Heat oven to 375°F (190°C).
  • In a casserole dish, combine rice, pepper, onion powder, cream of chicken, cheese, broccoli, and chicken stock. Mix until everything is combined.
  • Lay chicken on top of the rice mixture. Space evenly.
  • Cover with foil and bake for 50 minutes.
  • Take off cover and top the chicken with more cheese. Bake uncovered for another 5 minutes or until cheese is melted.

Casseroles are always at the top of our minds when we need an easy dinner option. This cheesy broccoli and chicken casserole will be on that mental list. It's an all-in-one dinner - chicken, vegetables, and rice all in one dish. Wild rice adds much more flavor than traditional white rice. It's filled with tender and juicy chicken. On top is a cracker and poppyseed mixture that, once baked, creates a nice crunchy texture. Your family will gobble up this easy dinner.

Number Of Ingredients 9

4 - baked chicken breasts
1 package(s) Steamfresh broccoli
1 can(s) cream of chicken soup (10.5 oz)
1 cup(s) shredded cheddar cheese
8 ounce(s) sour cream
1 package(s) long grain & wild rice mix (cooked to package directions)
1 package(s) Ritz crackers
1 tablespoon(s) poppy seed (more if desired)
1 stick(s) margarine

Steps:

  • For the casserole, bake chicken.
  • After cooled, chop into small cubes.
  • Cook rice to packages directions.
  • Mix those two ingredients together along with broccoli, cream of chicken soup, cheese & sour cream. Stir until well combined. Pour this mixture into greased casserole dish.
  • For the topping, melt the one stick of butter.
  • Put Ritz crackers into a big Ziploc bag & crush.
  • Mix above two ingredients along with the poppy seed. Sprinkle all across casserole.
  • Bake at 350 degrees for 30-45 minutes.
