SOY-MARINATED CHICKEN BREAST WITH WATERCRESS-PASTA SALAD AND MANGO-LIME PURéE
Steps:
- Preheat broiler. For marinade, combine soy sauce, chili paste, scallion whites, red wine, garlic, ginger, and black pepper in a bowl. Add chicken and let marinate. Cook pasta in salted boiling water until al dente; drain. For dressing, whisk together mustard, vinegar, sesame oil, and 2 tbsp canola oil. Toss pasta, red pepper, watercress and all but 2 tbsp scallion greens with dressing. In a blender, puree mangoes, lime juice, and remaining 1 tbsp canola oil. Coat broiler pan with cooking spray and add chicken in a single layer. Broil 6 to 7 minutes per side, until browned and cooked through. Cut breasts diagonally in half. On each plate, place 1/4 pasta and 2 pieces chicken. Drizzle with mango puree and garnish with remaining scallion greens.

- Cook pasta in a large pot of boiling salted water until al dente.
- Heat a large, non-stick skillet over medium high heat. Add olive oil and chicken, and saute slightly. Add mushrooms and peppers; saute until peppers are soft but crisp. Stir in lime juice and cilantro.
- Drain pasta, and transfer to a large serving bowl. Top with chicken mixture, and toss slightly. Garnish with lime slices.

CILANTRO-LIME PASTA SALAD (WITH OR WITHOUT CHICKEN)
Loaded with chunks of avocado and mango, this beautiful dish makes an excellent summer meal. But there's no need to limit it to one season because it's delicious year-round! The bright, refreshing flavors taste great hot or cold too, making this an excellent brown-bag lunch recipe. If going veggie simply omit the chicken, you'll get fewer servings without it (just so you know).

- Cook pasta according to package directions; drain.
- Meanwhile, for dressing, in a blender combine lime juice, cilantro, oil, sugar, 1/2 teaspoon salt, garlic powder, cumin, and cayenne pepper. Cover and blend about 30 seconds or until well mixed. Set aside.
- Lightly coat the rack of an indoor electric grill with cooking spray. Preheat grill. Sprinkle chicken with 1/2 teaspoon salt and black pepper. Place chicken on grill rack. If using a grill with a cover, close lid. Grill until chicken is no longer pink (170 degrees F). (For a covered grill, allow about 6 minutes. For an uncovered grill, allow 12 to 15 minutes, turning once halfway through grilling.) Cut chicken into bite-size pieces.
- In a large bowl combine pasta, chicken, tomatoes, red onion, mango, avocado, sweet peppers, and jalapeno pepper. Pour dressing over pasta mixture; toss gently to coat. If desired, serve with lime wedges.

- Bring a large pot of lightly salted water to boil. Add pasta, and cook until al dente, about 8 to 10 minutes. Drain, pour pasta into a large bowl, and stir in 3 tablespoons olive oil, 2 tablespoons butter, Parmesan, and parsley.

LIME CHICKEN PASTA
I really loved my friend's lemon chicken pasta recipe. Unfortunately, the only ingredients I had from her recipe was chicken & pasta. So I substituted most of the ingredients. Surprisingly, it was simply great and everyone liked this one more than the original. I make this over the summer months and this is definitely our favorite pasta recipe. My sister-in-law likes it so much that every time she has a dinner party, she makes this. Everyone who tries it asks for the recipe.

- Cook chicken your favorite way. I usually salt and pepper it and saute until no longer pink. Set aside.
- Cook pasta as the package direction.
- While pasta is cooking, dice avocados, and make pasta sauce by combining rest of the ingredients.
- In a large bowl, toss chicken, pasta, sauce, salt & pepper. After the pasta is well mixed, add avocado and toss lightly so avocado doesn't get mashed up.
- Top with more parmesan cheese.
SOLO HONEY LIME CHICKEN AND PASTA

- Cook the pasta in 2 quarts of salted water for 8 minutes or until done.
- Mix the olive oil, honey, and the juice from one lime in the bottom of a shallow dish.
- Add the cooked pasta and the cooked chicken and toss.
BLACKENED CHICKEN OVER GARLIC-LIME PASTA
Steps:
- Cook pasta according to package directions. Coat chicken in blackening seasoning. Heat 1 tbsp oil in a large skillet over medium high heat. Add chicken and brown 4 minutes on each side. Reduce heat and cook until chicken is no longer pink (mine took another 4-5 minutes). Remove chicken to a plate and reserve. Add remaining tbsp of olive oil and tbsp of butter to the pan. Add garlic and sauté over medium heat 1-2 minutes. Sprinkle flour and cook one more minute. Deglaze pan with tequila, cook 1-2 minutes. Add chicken broth and lime juice, bring to a boil. Simmer 5 minutes or until thickened, add parsley. Add drained pasta to the skillet and heat through. Add chicken back to the skillet and heat through. Serve immediately.
TEQUILA LIME CHICKEN CILANTRO PASTA
Steps:
- Bring a pot of salted water to a boil, cook pasta according to package direction, once pasta is cooked, drain and add 5tbsp of olive oil to prevent pasta from sticking. In a seperate pan add 2tbsp olive oil and chopped garilc, cook until fragrant approximately 2 minutes. Add the skinless, boneless chicken tenders cook until golden on ea. side ~4-6 minutes per side. Add the zest & lime juice, salt and pepper, follow with the tequilla. Allow to cook until the alcohol is evaported about 3 minutes. Insure that the chicken is fully cooked ~160F. Top off with the fresh chopped cilantro. Add the chicken mix to the pasta and enjoy.

GARLIC LIME CHICKEN & PASTA
A delicious, savory one pot meal! A great way to use up leftover spaghetti noodles! If possible, use a summer shandy or similar beer.

- Saute garlic in the olive oil, add the juice of one lime. Nestle in the chicken breasts and fry on high heat to brown up the outsides real well. Pour in about 2 tbsp of the beer, and let simmer down on high heat.
- Remove the chicken to cut into bite sized pieces (probably not done yet, but that's ok). While you are cutting the chicken, the sauces in the pan are still doing their thing.
- Return the chicken to the pan and let them cook in the scrumptious saucy bits of goodness for about 5 minutes.
- Meanwhile, mix together the vinegar, mustard, brown sugar in a cup. Pour it over the chicken chunks and stir.
- Start sauteeing the zuchinni in some olive oil with a little sea salt.
- After about 3 minutes of that getting settled, add in the remainder of the beer, the lime juice, and the basil. Let everything cook until sauce is thickened - just a couple minutes.
- Toss with cooked pasta & zuchinni, top with asiago & serve with a salad. YUM!
