LIME, APRICOT, AND SOY-SAUCE CHICKEN WINGS
Steps:
- Preheat oven to 425°F. Cut off wing tips, reserving for another use, and halve wings at joint. Divide wings between 2 large roasting pans, arranging in single layers.
- Purée remaining ingredients in a blender and pour mixture over wings, dividing evenly between pans. Bake wings in upper and lower thirds of oven 50 minutes. Turn wings over and switch position of pans in oven, then bake 45 minutes to 1 hour more, or until liquid is thick and sticky.
- Serve wings warm or at room temperature.

The lime is a refreshing change - with a garlic kick! From Gourmet magazine December 1999. I have made this many times and had great response to it. People who don't like the Buffalo wings enjoy these, and the spice loving wing fans just ask for more!

- mix ingredients. Taste and adjust. blend if too chunky. toss wings in sauce. Let marinate a couple of hours if you have time. Cover the pan and bake in 400F oven for half hour. Uncover pan pour off excess juice and bake another 20 minutes or until done.
