LIME, APRICOT, AND SOY-SAUCE CHICKEN WINGS
Steps:
- Preheat oven to 425°F. Cut off wing tips, reserving for another use, and halve wings at joint. Divide wings between 2 large roasting pans, arranging in single layers.
- Purée remaining ingredients in a blender and pour mixture over wings, dividing evenly between pans. Bake wings in upper and lower thirds of oven 50 minutes. Turn wings over and switch position of pans in oven, then bake 45 minutes to 1 hour more, or until liquid is thick and sticky.
- Serve wings warm or at room temperature.

- mix ingredients. Taste and adjust. blend if too chunky. toss wings in sauce. Let marinate a couple of hours if you have time. Cover the pan and bake in 400F oven for half hour. Uncover pan pour off excess juice and bake another 20 minutes or until done.

- Preheat the oven to 425ºF. Divide the chicken wings between the two pans. Put all of the sauce ingredients, except the red pepper flakes, into a blender and puree. Divide the sauce, pouring half into each pan. Toss the chicken wings to coat with sauce. Sprinkle red pepper flakes evenly over chicken, 1½ teaspoons per pan. Toss to combine. Cook the chicken in the upper and lower shelves of the oven for 50 minutes. Switch the position of the pans and flip wings over, so they brown on the other side. Cook for another 35-45 minutes, until the wings are dark and the sauce is thick. Remove trays from oven. Mound on a platter and sprinkle with scallions. Sliced cucumbers would be a good accompaniment. Enjoy!
