LEMON HERB BAKED CHICKEN TENDERS

Lemon Herb Baked Chicken Tenders are bright, zesty, and easy to prepare; they only require 30 minutes of marinating time and bake in 20 minutes!

Number Of Ingredients 9

1-1.5 pounds chicken tenders, get the freshest chicken, I usually get organic or at least hormone-free, vegetarian-fed chicken
1/4 cup fresh Italian parsley, washed, chopped, plus more for serving (you can also use a variety of whatever fresh herbs that you have on hand, I also used Winter Savory and Rosemary)
1/4-1/2 cup olive oil, the more oil you use, the more "juice" you will have for serving
1/4 cup fresh lemon juice
1 teaspoon Kosher salt, or amount to taste
1/4-1/2 teaspoon fresh ground pepper medley, or amount to taste
1 teaspoon (1 clove) minced garlic, optional
1 fresh, ripe lemon, sliced for serving and to bake with
1-2 tablespoons unsalted butter

Steps:

  • In a 9 x 13-inch baking dish, mix all the marinade ingredients (olive oil, lemon juice, minced garlic, chopped herbs/parsley, salt, and pepper), and coat the chicken tenders in it. Marinade chicken for at least a half-hour before cooking; you can also marinate for a few hours or overnight. The chicken tenders will only taste better the longer it is marinated.
  • When the chicken tenders are done marinating, add 1-2 tablespoons of butter on top, bake in a 425 degree F oven for 15-20 minutes. You can turn once halfway through (although I never bother to). Allow cooling 5 minutes before serving. Enjoy!

Even though I'm not known for my green thumb, I've somehow managed to keep a kitchen herb garden going. I chose this skillet lemon basil chicken to debut my first batch of fresh herbs. -Juli Snaer, Enid, Oklahoma

1-1/2 pounds chicken tenderloins
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons butter
1 tablespoon olive oil
1/2 cup white wine or chicken broth
3 tablespoons lemon juice
1/2 cup heavy whipping cream
2 fresh basil leaves, thinly sliced
1/4 teaspoon minced fresh thyme
Hot cooked angel hair pasta

Steps:

  • Sprinkle chicken with salt and pepper. In a large skillet, heat butter and oil over medium heat. Brown chicken on both sides. Remove from pan., Add wine and lemon juice, stirring to loosen browned bits from pan. Bring to a boil; cook 2-3 minutes or until liquid is reduced by half., Stir in cream, basil and thyme. Add chicken; return to a boil. Reduce heat; simmer, uncovered, 4-6 minutes or until chicken is no longer pink. Serve with pasta.

I usually made lemon herb grilled chicken, so naturally I had to turn this into fried chicken tenders for the kids! SO YUMMY!

12 small boneless skinless chicken breast strips
1 c all purpose flour
1 Tbsp lemon herb seasoning
1/2 c fresh lemon juice
salt and pepper to taste
1-1 1/2 c olive oil
1 dash(es) paprika

Steps:

  • 1. wash off the strips and lightly poke holes into with a fork.
  • 2. Put the lemon juice into a bowl, and let the strips sit in the lemon juice for about 5-10 minutes, to soak in the lemon flavor.
  • 3. in another bowl add the flour, paprika, a pinch of salt and pepper, and 1/2 tablespoon of lemon herb seasoning. mix well.
  • 4. coat the chicken strips well in the flour mixture. You may have to do this twice, to be sure of a good coating.
  • 5. heat the oil in a skillet at about medium/med high heat.
  • 6. once oil is heated, add the the coated strips to the oil and cook until golden brown, with a slightly yellow tint.
  • 7. take out of oil and place on a paper plate, to soak up excess oil. While still hot, dash on a small amount of lemon herb seasoning.
  • 8. allow to cool, and enjoy! Check out my sauce for this recpie as well!

½ teaspoon paprika
½ teaspoon salt
¼ teaspoon pepper
3 large boneless, skinless chicken breasts, cut into 2-inch pieces
2 eggs, slightly beaten
1 cup Italian seasoned bread crumbs
½ cup sugar
½ cup lemon juice
1 ½ teaspoons curry powder

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a bowl, stir together paprika, salt, and pepper. Sprinkle seasoning over chicken pieces. Dip pieces in egg, then dredge in bread crumbs. Arrange chicken pieces in a single layer in an aluminum foil-lined 15x10-inch jelly roll pan.
  • Bake in preheated oven for 15 minutes, turning once.
  • In a small saucepan over medium-low heat, stir together sugar, lemon juice, and curry powder, stirring until sugar dissolves, about 5 minutes.
  • Drizzle lemon sauce over chicken, return to oven, and bake 5 minutes more.

1 clove garlic, minced
6 sprigs fresh thyme, leaves stripped and chopped

Steps:

  • Combine the olive oil, garlic, chopped thyme, lemon zest, and lemon juice in a large mixing bowl. Season the chicken tenders with salt and pepper. Toss chicken with the olive oil mixture; allow to marinate for 5 minutes.

This is such a light, easy, yet flavorful way to cook chicken! I couldn't believe it when my kids actually fought over "who got more".....There were no leftovers when I made this, and I actually used this as the meat in a wonderful fettuccine Alfredo! Just delicious!

1 1/2 lbs chicken breast tenders
2 tablespoons fresh lemon juice
2 teaspoons chopped fresh rosemary (or 1 tsp. dried rosemary)
1/8 teaspoon thyme
1/8 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon fresh ground black pepper
2 teaspoons olive oil

Steps:

  • Wash and drain chicken breast tenders.
  • Mix all of the other ingredients (except for the olive oil) in a small bowl and whisk thoroughly.
  • Rub the herb mixture onto the chicken tenders thoroughly, until coated well on both sides of the chicken.
  • Heat the olive oil in a large nonstick skillet over medium high heat.
  • Add chicken to pan and sauté approximately 4 minutes on each side, until the color is lightly golden brown.
