MEATLOAF TATER TOT CASSEROLE
I cannot remember where this recipe came from, but it couldn't be easier to throw together for dinner on a hectic weekday. I like to add some spices to mine, and next time I intend to toss in some chopped onions and green peppers (I considered jalepenos as well). Tell your kids it's a hamburger and cheese tots all-in-one.

Steps:
- Preheat oven to 350.
- Combine first six ingredients and mix well.
- Add ground beef, completely combining mixture.
- Spread evenly in a 13x9 inch baking pan.
- Top with a single layer of tater tots (you may have a few left over).
- Pour cheddar cheese soup over the tater tots.
- (stirring the soup with a spoon as you pour makes it come out of the can a little easier).
- Bake for one hour.
- Fabulous with ketchup.

Steps:
- Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir ground beef in a large skillet over medium heat until no longer pink and completely browned, 7 to 10 minutes; season with salt and black pepper. Stir cream of mushroom soup into the cooked ground beef; pour the mixture into a 9x13-inch baking dish. Layer tater tots evenly over the ground beef mixture; top with Cheddar cheese.
- Bake until tater tots are golden brown and hot, 30 to 45 minutes.

LEFTOVER MEATLOAF CASSEROLE
A quick casserole using leftover ingredients turns meatloaf, pasta, 2 kinds of cheese, and spices into a whole new meal.

Steps:
- Bring a large pot of lightly salted water to a boil; cook the rotini at a boil until tender yet firm to the bite, about 8 minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- While pasta cooks, mash meatloaf in a 2 1/2-quart casserole dish. Add corn and mix.
- Combine tomato sauce, Italian seasoning, basil, oregano, onion powder, garlic powder, salt, pepper, and sugar in a bowl. Stir well.
- Drain pasta and add to the meatloaf mixture in the casserole dish. Mix in tomato sauce mixture. Top with Parmesan cheese, bread crumbs, and Cheddar cheese.
- Bake in the preheated oven until bubbly, 30 to 45 minutes.

This is one of my family's favourite meals, as it was for me when I was a child. Potatoes cook right on top of the meat, so it's easy for Mom, and the kids love the way it looks.

- Pat into a Pam sprayed 9x13 pan.
- Place the Tater Tots in rows over the meatloaf.
