After experimenting with many different spice combinations over the years for me this is the closest to the store-bought package taco seasoning --- I always increase this recipe 10x and keep in a glass jar tightly covered in my fridge to have ready for recipes, if you like lots of heat then adjust the cayenne pepper to taste or you may omit completely, if you can find some dried granulated tomato powder then add about 1-2 teaspoons with the mix, I purchase mine at a bulk spice store it really gives the seasoning a lift, the amounts stated are equivalent to one package taco seasoning mix -- don't save this mix to use only for tacos, add some in your recipes to kick up the flavor, it's even great in chili, ground beef mixture for casseroles, stew, soups, and add some into you hamburger mixture for burgers, I even add this to my Parmesan meatballs --- this also makes a great gift for the cook on your list just increase amounts and present in a fancy glass jar.

2 tablespoons mild chili powder (for the best flavor do not reduce this amount)
1/2-1 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried oregano
1/2 teaspoon paprika
2 -3 teaspoons cumin
1 teaspoon seasoning salt (or use 1/2 teaspoon white salt)
1 teaspoon black pepper
1 pinch cayenne pepper (optional or to taste)

Steps:

  • Combine all ingredients (double or triple if desired) .
  • Store tighty sealed in a small glass jar until ready to use (I store mine and all spices in the refrigerator).
  • **NOTE** this is only optional, if using the mix for tacos you might want to add in some flour into the seasoned cooked ground beef to thicken, I also add in about 1-1/2 cups tomato sauce and simmer, stirring for 20 minutes over low heat.

You won't see this anywhere, I developed this dip! Serve this at your next get together and your guests will never want to leave after they get a taste of this! Although you can serve this chilled it is much better at almost room temperature. You can prepare the ground beef mixture up to 2 days in advance and just warm in the microwave before using in the recipe. I use my guacamole recipe#71842 and my recipe#76616 to flavor the sour cream and the ground beef, or you can use store-bought or your own favorite recipe! We like extreme spice so I add in 2 jalapeno peppers and also dried chili flakes, if you are serving this to a crowd of people you can reduce or omit the spices completely, also you can adjust all the ingredients to taste. Servings is only estimated, if you are serving a huge crowd then I advise to make two dishes of this dip!

1 (16 ounce) can refried beans
4 cups cups shredded Mexican blend cheese, divided (can use more to taste)
2 1/2 cups sour cream (can use more)
1 tablespoon taco seasoning (start with 1 tablespoon and add in more to taste)
1 cup prepared guacamole (or to taste)
1 -2 cup prepared salsa
1 cup sliced black olives (or to taste)
1 -2 plum tomato, chopped
2 -3 green onions, finely chopped
1 1/2 lbs lean ground beef (or use a mixture of ground beef with Italian sausage meat, casings removed)
1 small onion, finely chopped
1 -2 tablespoon minced fresh minced garlic (to taste) (optional)
1 -2 jalapeno pepper, seeded and finely chopped (optional)
1 (1 1/4 ounce) package taco seasoning mix (I use Kittencal's Taco Seasoning Mix)
salt and black pepper

Steps:

  • Prepare a 13 x 9-inch glass dish (or use a similar serving dish).
  • In a skillet brown the ground beef with onion, garlic and jalapeno peppers (if using) until browned; drain fat then add in the taco seasoning; cook stirring for 1 minute or a little more, season with salt and pepper to taste; set mixture aside to cool slightly.
  • In a bowl mix together the sour cream with taco seasoning (start with 1 tablespoon adding in more to taste).
  • Spread the refried beans in the bottom of the baking dish.
  • Sprinkle about 2 cups Mexi-blend shredded cheese on top of the beans.
  • Sprinkle the warm cooked ground beef mixture evenly on top of the cheese.
  • Spread the sour cream over the ground beef.
  • Dollop or spread the guacamole carefully over the sour cream.
  • Pour the salsa over the guacamole and then spread out as best you can using a spoon.
  • Sprinkle with remaining 2 cups shredded cheese (can use more).
  • Top with sliced or chopped black olives.
  • This can be served immediately or chill it for up to 24 hours (it is better served right away!).
  • Delicious!

KITTENCAL'S RED ENCHILADA OR TACO SAUCE

I strongly suggest to make this sauce a day ahead and refrigerate as the flavors will blend together even more, and I advise that you double amounts if you are using it for enchiladas, what you do not use may be frozen for later use, this sauce freezes very well, in fact I most always make more to have handy in my freezer --- this makes a fantastic sauce for tacos or enchiladas it is the only one that I use I never purchase bottled this is much better --- the sour cream is only optional add in for a creamy-style sauce :)

3 -4 tablespoons olive oil
1 small onion, finely chopped
1 teaspoon dried red pepper flakes (or to taste)
1/2 teaspoon dried oregano
3 -5 teaspoons chili powder (or to taste)
1/2 teaspoon dried basil
2 -4 teaspoons cumin (can use more to taste)
1 tablespoon fresh minced garlic (or to taste)
1/3-1/2 cup salsa
1 cup tomato sauce (or use crushed tomatoes)
1 cup water mixed with beef bouillon powder or 1 cup just use water
1 teaspoon seasoning salt (or to taste) or 1 teaspoon white salt (or to taste)
1 teaspoon ground pepper (or to taste)
1/2 cup sour cream (optional, add in for a creamy sauce, can use more to taste)

Steps:

  • Heat oil in a medium saucepan over medium heat; add in onion, red pepper flakes, oregano, basil, chili powder and cumin and saute for 3 minutes.
  • Add in fresh garlic and saute for 2 minutes.
  • Add in salsa, tomato sauce and beef broth or water; mix with a spoon to combine.
  • Reduce heat to low and simmer uncovered stirring occasionally for 30-40 minutes or until reduced slightly.
  • Adjust all spices to taste then season with seasoned salt and pepper to taste.
  • Mix in sour cream if using and heat through (do not allow to boil).
  • OPTIONAL: you may cool the mixture then process on a food processor or a blender for a smoother texture.

Do not spread the sour cream directly over the tortillas as it will cause the tortilla to turn soggy, if desired a can of drained black beans can be added into the ground beef mixture, I also like to sprinkle about 3 chopped green onions on before adding on the shredded cheese just on the top layer --- this is *very* good!

1 1/2 lbs ground beef or 1 1/2 lbs ground turkey
1 large onion, chopped
1 small green bell pepper, seeded and chopped
2 tablespoons fresh minced garlic (or to taste)
seasoned salt and black pepper (to taste)
1 -2 jalapeno pepper, seeded and finely chopped (optional or to taste)
1 (1 1/4 ounce) package taco seasoning mix
1 (7 ounce) jar salsa (mild or spicy)
3 (8 inch) flour tortillas
1 (8 ounce) container sour cream (can use more or less)
2 cups shredded cheddar cheese (can use more or less)
1 (4 ounce) can diced green chilies (I usually use 2 cans)

Steps:

  • Set oven to 375 degrees F (set oven rack to second-lowest position).
  • Grease a round 10-inch baking dish (I use a 9 or 10-inch round cake pan or a pie plate).
  • Cook ground beef or turkey with the onion, bell pepper, garlic and jalapeno peppers (if using) until crumbly and cooked through; drain off the fat.
  • Mix in the taco seasoning mix; cook stirring 2 minutes.
  • Add in salsa; mix to combine and simmer uncovered for about 25 minutes, then season with salt and pepper to taste.
  • To assemble; place 1 tortilla in the bottom of the pan then sprinkle 1/3 of the ground beef mixture over the tortilla, then dollup 1/3 the sour cream over the ground beef then carefully spread out using back of a spoon or a knife.
  • Sprinkle 1/3 the chilies over the sour cream, then 1/3 of the shredded cheddar cheese.
  • Repeat two more times (you should have used 3 tortillas) ending up with the cheese on the top.
  • Cover loosley with foil (making certain not to allow the foil to touch the cheese or the cheese will stick to the foil).
  • Bake for about 1 hour.
