Sausage Muffins image

I made these muffins for my family because they make a great on-the-go breakfast, snack, or even a finger food! Want to change things up? Add ham and jalapeno peppers.

1 lb (any flavor) bulk sausage
3 c biscuit mix
1 can(s) campbell's fiesta nacho cheese soup
2/3 c milk
1 c cheddar cheese, shredded

Steps:

  • 1. Cook and crumble sausage until no longer pink - drain
  • 2. Combine sausage, biscuit mix, soup, shredded cheddar and milk to form a dough. If dough is too stiff, add 1/4c milk to loosen it up.
  • 3. If not using muffin liners, liberally spray muffin tins. Using a tablespoon (or a medium ice cream scooper), spoon mixture into muffin tins.
  • 4. Bake at 350* for 15-18min.
  • 5. Makes 24 regular sized muffins OR 52 mini muffins
