KEEBLER SANDIES CHERRY BROWNIE BARS

Number Of Ingredients 7

2 cups Keebler® Sandies® cookies (any variety) crushed (16 to 20 cookies per 2 cups)
4 tablespoons margarine, melted
1 (20-ounce) box fudge brownie mix
water, per brownie package directions
vegetable oil, per brownie package directions
egg, per brownie package directions
1 (12-ounce) can cherry pie filling

Steps:

  • 1. Combine crushed Sandies® Cookies and margarine in a mixing bowl and press into sides of 13 x 9 x 2-inch baking pan coated with cooking spray.2. Prepare brownies following directions on box using water, vegetable oil, and eggs. Pour batter on top of the Sandies® Cookies crust. Evenly place dollops of cherry pie filling into brownie batter.3. Bake at 350°F for 28 minutes or until toothpick inserted comes out clean. Remove from oven and cool.4. To serve, dust with powdered sugar (cover cherries with a paper circle cut out to avoid covering with powdered sugar). If desired, cut bars into hearts with heart-shaped cookie cutter.HELPFUL HINT: Crushed cookies can be prepared by placing cookies in a plastic freezer or sandwich bag and crushing with a rolling pin. Or, if preferred, pulse cookies within your food processor.

This is my favorite recipe for pecan sandies and tastes just like the store bought ones. The recipe is from copykat.com, but I wanted to save it here, and in my special cookbook!!

Number Of Ingredients 10

1/2 cup vegetable shortening
1/2 cup white sugar
1/2 cup powdered sugar
1 egg, beaten
1/4 teaspoon salt
1/2 teaspoon cream of tartar
1/2 teaspoon baking soda
1 teaspoon vanilla
1 3/4 cups flour
1/2 cup finely chopped pecans

Steps:

  • Preheat oven to 350 degrees.
  • Measure flour, cream of tarter, and baking soda together and set aside.
  • Cream vegetable shortening and sugars together until fluffy.
  • Add vanilla, salt, and egg to sugar mixture and beat until smooth.
  • Add flour mixture to sugar mixture 1/3 at a time, beating after each addition until completely mixed.
  • Dough will seem a little thick.
  • Stir pecans into dough with a strong spoon.
  • Chill dough for 30- 45 minutes.
  • Roll dough into 1- 1 1/4 inch balls and place on ungreased cookie sheet.
  • Flatten balls to 1/4 inch thickness.
  • Bake for 12- 15 minutes, until slightly golden.
  • Remove to cooling rack.
  • When completely cool, store in air-tight container.
