Tuna Biscuit Ring image

This is one of my favorite recipes, using Albacore tuna,celery, mushroom soup, blue cheese, peas, and served with a cheese sauce. A great presentation - I often serve this during Lenten season too- it is so good my family asks for it!!

1 c thawed peas
14 oz can albacore tuna, drained and flaked
1 large egg
1/2 c chopped onion
1/2 c shredded sharp cheddar cheese
1/2 c chopped fresh parsley
1 tsp celery salt
1/4 tsp pepper
1/2 can(s) cream of mushroom soup, undiluted
2 c bisquick baking mix
1/2 c cold water
CHEESE SAUCE:
1/4 c butter or margarine
1/4 c bisquick baking mix
1/4 tsp each salt and pepper
2 c milk
1 c shredded cheddar cheese/ or 1/2 cup crumbled blue cheese
1/2 can(s) cream of mushroom soup, undiluted
1 c thawed peas

Steps:

  • 1. Beat egg slightly; stir in tuna, onion, cheese, parsley, celery salt and pepper, 1/2 can undiluted soup and peas into egg. Set aside. Combine baking mix and water to a soft dough; knead 6 times on floured board. Roll into rectangle, 15x10-inches. Spread with tuna mixture. Roll up, beginning at long side. With sealed edge down, shape into ring on the greased jelly roll pan; pinch ends together. With scissors, make cuts 2/3 of the way through ring at 1-inch intervals. Turn each cut section on its side to show filling. Spray top with buttery non stick baking spray. Bake in 375^ for 25 to 30 minutes. Serve with hot cheese sauce. --- Cheese Sauce: Melt butter over low heat; blend in baking mix, salt and pepper. Cook stirring until smooth and bubbly. Remove from heat; stir in milk, soup and peas. Heat to boiling. stirring constantly for 1 minute. Stir in cheese until melted. Serve with each slice of the tuna ring. --- Note: Chopped cooked chicken, hamburger, scrambled eggs and ham, or vegetables may be substituted for the tuna, if desired. Makes a great breakfast, lunch or dinner entrĂ©e. Can be made Mexican style with hamburger,spices and cheese; or pizza style with seasonings and pepper jack cheese. You get the idea, endless combinations.
