Bananas 3
Plain flour 1 1/2 cups
Sugar 1 cup
Eggs 1
Butter 1/4 cup
Baking soda 1 tsp
Salt 1 tsp

Steps:

  • Preheat oven to 325°F. Lightly grease a loaf tin.
  • In a bowl, mix the bananas, melted butter, sugar and egg together.
  • In another bowl, sift the flour and baking soda together.
  • Gradually add the flour to the batter until just combined.
  • Pour the batter into the prepared pan.
  • Bake for an hour. To test if the cake is ready, insert a toothpick into the center; if it comes out clean, the cake is ready.
  • Leave the cake to cool for a couple of minutes in the tin, before turning out onto a wire rack to cool completely.

1 c sugar
1/2 tsp salt
1/2 c butter or margarine-one stick
3 ripe bananas-very ripe is great
2 eggs-beaten
1 tsp baking soda
2 c flour
1/2 c nuts chopped-pecans or walnuts

Steps:

  • 1. CREAM SUGAR, SALT AND BUTTER OR MARGARINE WITH BEATER
  • 2. THEN ADD THE 2 EGGS AND 3 MASHED BANANAS to the above mixture and blend well.
  • 3. IN SEPERATE BOWL ADD BAKING SODA PLUS THE FLOUR, SIFT AND MIX.
  • 4. ADD THE DRY INGREDIENTS TO THE CREAMED MIXTURE (OF SUGAR, SALT, BUTTER AND THE BANANA MIXTURE)MIX ALL UNTIL JUST WELL BLENDED THEN ADD THE CHOPPED NUTS.
  • 5. TURN INTO A GREASED LOAF PAN AND BAKE FOR ABOUT 1 HOUR AT 325 degrees or til brown. You can stick a toothpick into center and if it comes out clean it is done. Do not overbake and start checking with toothpick as soon as it starts looking brown which will be around an hr. I like to drizzle a little powered sugar frosting over the top while it is still warm, or just spread a little butter over the top instead. I prefer, the drizzle of frosting; however. It is wonderful bread and the best banana bread I have ever eaten. My grandmother clipped it out of the Omaha World Herald newspaper around 1958.

3 ripe bananas
1/4 cup white sugar
1/4 cup Milk
1 tsp baking soda
1 tsp vanilla
2 large Eggs
2 cups flour
1/2 cup vegetable oil
1/2 cup chopped walnuts ((Optional if you don't like nuts, you can also put in chocolate chips instead))

Steps:

  • Preheat oven to 325 F
  • In a large bowl, put 2 bananas and smash it into a paste (you can use the back of a fork) The last banana, is for decoration on top so save it for the end!
  • Add all of the other ingredients from list into bowl and mix (no need to over mix since you don't want the batter to become too tough)
  • Pour batter into bread pan
  • Cut last banana in half length wise and push them into the top of the banana bread.
  • Bake for 1 hour (Depending on your oven, you may need to cook it for longer or shorter, use your judgement and check it at 45 minutes)

1/2 cup melted unsalted butter or vegetable oil, plus more for greasing pan
1 3/4 cups all-purpose flour (see Cook's Note)
1 cup toasted pecans, chopped
1/2 cup granulated sugar
1 teaspoon baking soda
1 teaspoon ground cinnamon
Fine salt
1/4 teaspoon freshly grated nutmeg
2 large eggs, lightly beaten
1/4 cup buttermilk, sour cream or yogurt
1/2 cup light brown sugar, lightly packed
1 teaspoon pure vanilla extract
4 soft, very ripe, darkly speckled medium bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly butter one 9-by-5-inch loaf pan.
  • Whisk together the flour, pecans, granulated sugar, baking soda, cinnamon, 1/2 teaspoon salt and nutmeg in a large bowl. Whisk together the eggs, melted butter, buttermilk, brown sugar and vanilla in a medium bowl; stir in the mashed bananas. Fold the banana mixture into the flour mixture until just combined (it's OK if there are some lumps).
  • Pour the batter into the buttered pan and lightly tap the pan on the counter to evenly distribute the batter. Bake until browned and a toothpick inserted into the center comes out completely clean, about 1 hour. Let the bread cool for 10 minutes in the pan, then turn out onto a rack to cool completely.

This recipe is so close to my heart. When I was young, I refused to eat my other Grandmother's banana bread because it wasn't like Grandma Joyce's. When I went off to college, my Grandma mailed me a loaf every couple weeks. (I even fell down my dorm stairs one time rushing down to pick up my package containing banana bread.) It has been six years or so since she passed. Now, when I miss her terribly, I bake loaf after loaf of her bread and give it away to share the joy I felt every time I received her special packages.

1 1/2 cups flour
1 cup sugar
1/2 teaspoon salt
1 teaspoon baking soda
1/2 cup shortening
2 eggs
2 bananas (very, very ripe and I mean the blacker the better!!)

Steps:

  • Grease and flour one regular loaf pan or two small loaf pans.
  • Preheat oven to 350 degrees Fahrenheit.
  • Combine flour, sugar, salt, baking soda, and shortening. Cut shortening in as for pie crust (I use a pastry blender.).
  • In a separate bowl, beat eggs and sliced bananas until mixed well.
  • Add banana mixture to shortening mixture and mix well.
  • Place batter in prepared pan(s).
  • Bake approximately 30 minutes.
  • Tip: I usually use the toothpick test, but the toothpick should not come out completely clean. This is a very moist recipe, so look for the toothpick or knife to be mostly clean. When the bread is done, it will be a dark brown and should have a slight crack down the middle.

A cross between banana bread and a drizzle cake, this easy banana loaf recipe is a quick bake that can be frozen. It's great for using up overripe bananas, too.

140g butter, softened, plus extra for the tin
140g caster sugar
2 large eggs, beaten
140g self-raising flour
1 tsp baking powder
2 very ripe bananas, mashed
50g icing sugar
handful dried banana chips, for decoration

Steps:

  • Heat oven to 180C/160C fan/gas 4.
  • Butter a 2lb loaf tin and line the base and sides with baking parchment.
  • Cream 140g softened butter and 140g caster sugar until light and fluffy, then slowly add 2 beaten large eggs with a little of the 140g flour.
  • Fold in the remaining flour, 1 tsp baking powder and 2 mashed bananas.
  • Pour the mixture into the prepared tin and bake for about 50 mins, or until cooked through. Check the loaf at 5-min intervals by testing it with a skewer (it should be able to be inserted and removed cleanly), as the time may vary depending on the shape of your loaf tin.
  • Cool in the tin for 10 mins, then remove to a wire rack.
  • Mix 50g icing sugar with 2-3 tsp water to make a runny icing.
  • Drizzle the icing across the top of the cake and decorate with a handful of banana chips.

3/4 cup milk
1/2 cup butter
1/2 cup sugar
5-1/4 to 6 cups all-purpose flour
2 packages (1/4 ounce each) active dry yeast

3 medium ripe bananas, mashed

  • In a large saucepan, cook and stir the milk, butter and sugar over medium heat until butter is melted; cool to 120°-130°.
