UNBELIEVABLE SQUASH CASSEROLE
A wonderful casserole, even for those who don't particularly care for squash!

Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease a baking dish.
- Heat oil in a skillet over medium heat; cook and stir squash and onion until tender, 8 to 10 minutes. Add water and simmer to soften squash, 2 to 4 minutes. Stir cream of chicken soup, sour cream, and Cheddar cheese into squash mixture; mix well.
- Transfer squash mixture to the prepared baking dish; top with stuffing mix.
- Bake in the preheated oven until cheese is bubbling and stuffing is browned, about 30 minutes.

YELLOW SQUASH CASSEROLE
Tender squash, gooey cheese and crunchy crackers make this a memorable side dish or a hearty main course. This is a great dish that can be made with low-fat ingredients and is still just as good!

Steps:
- Preheat oven to 400 degrees F (200 degrees C).
- Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl.
- In a medium bowl, mix together cracker crumbs and cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into a 9x13 inch baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter.
- Bake in preheated oven for 25 minutes, or until lightly browned.

JONI'S SUMMER SQUASH CASSEROLE
This recipe is so TASTY, and one that my sister introduced me to... Goes GREAT with just about any meal, and especially with baked pork chops, chicken, or turkey. Our family LOVES this, and we have been making it for years... Great for Thanksgiving or Christmas too, in place of stuffing!

Steps:
- Preheat oven to 325.
- Put stuffing mix into a lg. Zip-lock bag, and roll with a rolling pin, to make stuffing into fine crumbs.
- Melt margarine, and mix with the crumbs, in a lg. bowl.
- Put 1/2 crumbs on bottom of a 9x13" pan.
- Mix the rest of the ingredients well.
- Pour squash mixture on top of crumbs. Top with remaining crumb mixture.
- Bake for 1 hours.
- Note:.
- You can spoon these into little oblong aluminum pans, and freeze until ready to use.

My friend Jo Ann shared this recipe with me after having it at her house one time. It is really delicous and so easy to make.

- 1. Mix soup, sour cream with onions, and carrots. Layer squash in greased pan then layer of sauce and layer of stuffing. Repeat. Pour butter over all and bake at 350 for 40 minutes.
