I got this recipe in 1980 when I worked at University of Michigan hospital. The ward secretary on our unit always brought this to our potluck lunches. Everyone loves it because of its great cheesecake flavor without the heaviness of regular cheesecake. Easy to make, easier to eat!

2 cups graham cracker crumbs
2 tablespoons sugar
6 tablespoons butter, melted
6 ounces lemon Jell-O gelatin
2 cups boiling water
8 ounces cream cheese
12 ounces evaporated milk, chilled

Steps:

  • Mix Graham cracker crumbs, 1 tablespoon sugar, and melted butter or margarine.
  • Press Graham cracker crumb mixture into the bottom of a 9"x13" pan. (You do not need to grease the pan.).
  • Mix lemon Jello with 2 cups boiling water until Jello is dissolved.
  • Add cream cheese to Jello mixture, breaking cheese up with a potato masher or the beaters of an electric mixer.
  • In a chilled bowl (glass or metal work best) whip with electric mixer chilled evaporated milk with 1 tablespoon sugar until small peaks form. (Getting peaks to form is much easier if the bowl and milk are cold.).
  • Add Jello mixture to evaporated milk and continue to beat until well blended.
  • Pour over Graham cracker crust.
  • Chill until firm.

1 1/2 c canned raspberry pie filling, divided
1 1/2 c cold milk
2 box (4 serving size) jello cheesecake flavor instant pudding & pie filling
1 pkg (8 ounces) cool whip, thawed
1 (6 ounce) ready crust graham cracker pie crust

Steps:

  • 1. Spoon 1/2 cup of the pie filling into crust. Pour milk into large bowl. Add pudding mixes. Beat with wire whisk 2 minutes or until smooth. (Mixture will be thick.) Immediately stir in whipped topping. Spoon over pie filling in crust. Refrigerate 3 hours or until set. Top with remaining pie filling. Garnish is desired. Makes 8 servings.

FOR THE BOTTOM CRUST:
1 1/2 c graham cracker crumbs
1/4 c melted butter
1/4 c brown sugar
FOR THE FILLING:
1 box 4 oz. jello, you choose the flavor!
1 c boiling water
1 pkg 8 oz. cream cheese, softened
1/2 c sugar
1 pkg dream whip

Steps:

  • 1. PREPARE CRUST: Blend crust ingredients together. Press into buttered 9 x 9 inch pan. Chill. You may want to save a few crumbs to garnish the top. it may be a little thick--see my photos of the triple layer jello cheesecake. Adjust to your liking.
  • 2. PREPARE THE FILLING: Prepare Dream Whip according to package directions. Keep in refrigerator until ready to use. Dissolve Jello in hot water and cool to room temperature. DO NOT FOLLOW PACKAGE DIRECTIONS FOR JELLO! ONLY USE 1 CUP HOT WATER! Beat sugar and cream cheese together. Mix cooled Jello into cheese mixture. Fold in prepared Dream Whip. Pour into pan and chill until set.
  • 3. NOTE: Often I double the recipe, and then you can put it in a 9 x 13 pan. If you use purchased graham cracker crumbs, 1/2 package is plenty for a 9 x 9 pan; a full package is plenty for a 9 x 13 pan.
  • 4. I started experimenting with layered flavors. I used a 10" square springform pan, but you can use any type of pan you prefer. All I did was make three different filling recipes, like cherry, lime, and lemon. Make the first, pour it on the crust; put it in the refrigerator. By the time you make the second, the first will be set and you can gently pour it on top, refrigerate it, and prepare the third.
  • 5. It's not only pretty, but whatever flavors you combine are delicious and cut a little of the sweetness down. Very flavorful and fun! Two layers would work, too; play with it and have fun!

1 cup unsalted butter
1/2 cup dark brown sugar, packed
2 cups flour
1 cup walnuts, chopped
3 ounces lemon gelatin
1 cup hot water
1/2 cup sugar
8 ounces cream cheese, softened
1 pint whipping cream
6 ounces strawberry gelatin
3 ounces strawberry gelatin
4 1/2 cups hot water
1 (7 g) envelope unflavored gelatin (approximately 2.5 teaspoons)

Steps:

  • Preheat oven to 350 degrees. Cream butter and sugar together until light and fluffy; add flour and nuts and stir until a crumbly dough is formed. Press dough into bottom of 9x13 inch pan. Bake for 10 minutes or until crust is brown. Cool.
  • Dissolve lemon gelatin in 1 cup of hot water. Cool. Meanwhile, whip the whipping cream (or you could substitute an 8 oz container of Cool Whip instead). Cream the cream cheese and 1/2 cup sugar together until fluffy. Add cooled lemon gelatin and stir until blended. Fold whipped cream into cheese mixture. Pour onto cooled crust. Chill.
  • For topping, dissolve the strawberry gelatin in 4 1/2 cups hot water and chill for about 15 minutes. Gently pour on top of cheese mixture. Chill until set and ready to serve.
  • Tips:.
  • To lighten this dessert you can make a graham cracker crust with 2 cups crushed graham crackers, 1/2 cup melted butter and 1/3 cup sugar or Splenda. 8 oz of cottage cheese can be substituted for the cream cheese. Place cottage cheese in a blender and blend until smooth (otherwise it will taste grainy). Substitute sugar free gelatin for the gelatin in all or part of the recipe. Other flavors of gelatin can be substituted.

2 c crushed pretzels
3 Tbsp sugar
1/2 c unsalted butter, melted
2 pkg (8 oz ea) cream cheese, softened
1 c sugar
8 oz container of cool whip
6 oz package strawberry jello
1 1/2 c boiling water
16 oz package frozen sliced strawberries

Steps:

  • 1. Preheat oven to 350 degrees F. Mix together the pretzels, 4 tablespoons sugar and melted butter. Press into the bottom of a 10 inch spriingform pan. Bake for 10 minutes. Set aside to cool completely.
  • 2. Beat together the cream cheese and sugar until no lumps are left. Fold in the Cool Whip. Spread over the COMPLETELY COOLED crust. Make sure you spread completely to the sides of the pan, to keep the jello layer from seeping into the crust. Refrigerate for at least 30 minutes to an hour.
  • 3. Meanwhile, make the strawberry layer. Stir together the gelatin mix and boiling water in a medium sized bowl. Add the frozen frozen strawberries, and stir until they thaw and the mixture is partially set. Put the bowl in the fridge for another 15-20 minutes until thickened but not completely set.
  • 4. NOTE: If your frozen strawberries are whole, this recipe works better if you slice them before adding to the jello. They should be easy to slice, even when frozen.
  • 5. Spoon the Jello layer over the cream cheese layer. Refrigerate until completely chilled and the jello is fully set. This will take at least 1 hour.
  • 6. Right before serving, remove the sides from the pan. If desired, you can decorate the top with whipped cream and a sprig of mint.

MOM'S 1950S PINK JELLO CHEESECAKE

This was a classic in our area in the 1950's and early 1960'. I can't tell you where Mom got the recipe but it was very common back then. We all loved it. It doesn't have to be pink. My sister, Becky, would only eat the lemon flavor. If you prefer a different color or flavor, just switch the flavor of Jello you use.

3/4 c melted butter or margarine
24 squares graham crackers, crushed
1 Tbsp powdered sugar
FILLING:
1 box strawberry jello (or use lemon, lime, or other flavor)
1 c boiling water
1 (8 ounce) pkg cream cheese, softened
1 c sugar
2 tsp vanilla
1 2/3 c evaporated milk, chilled in the can in the refrigerator overnight

  • 1. For crust: Mix together and pat into bottom of a 9 by 13 inch pan. Save a few crumbs for the top of the cheesecake if you like.
  • 2. For Filling: Mix Jello with 1 cup boiling water. Beat in cream cheese, sugar, and vanilla. In a separate bowl whip evaporated milk until stiff peaks form. Fold into cheesecake mixture. Pour all into crust lining 9 by 13 pan. If you saved a few crumbs for the topping sprinkle them on top now. Chill until firmly set. You can serve with whipped cream if you like.

This is a really delicious and easy recipe. It comes from a 1992 Jello Magazine. You may use sugar free jello and low fat cottage cheese, cool whip, and cream cheese to keep this recipe light.

My grandmother used to make this all the time when I was little, and it still takes me back to my childhood whenever I eat it. 2 cups water
2 cups whipped cream (sweetened)

Steps:

  • Spread graham cracker crumbs on the bottom of an 8" round trifle.
  • dish or glass bowl.
  • In another bowl, mix mascarpone cheese, vanilla extract, powdered sugar, and jam.
  • Gently spread cheese mixture on top of graham cracker layer (it will be a thin layer).
  • Mix strawberries with 1/4 cup of sugar.
  • Spread strawberries on top of cheese layer.
  • Pour jello mix and water in a small saucepan, heat to a full boil (stirring as needed).

This is a simple no bake cheesecake that comes out creamy and delicious even though it is low fat. The low fat version actually tastes better than the full fat version, the flavor comes out more. My husband who loves his rich foods absolutely dies over this recipe. Feel free to substitute the flavors for other one's that you think would work well.

3 1/2 ounces low-fat graham crackers
1 slightly beaten egg white
14 ounces reduced-fat cream cheese
7 ounces light strawberry yogurt
2 (1 ounce) satchets sugar-free jello
3 1/2 ounces sliced strawberries (optional)

Steps:

  • Crush graham crackers into fine crumbs and mix well with egg white (since this is non-cook be careful NOT to get any yolk mixed into the recipe). Spread and press firmly into the bottom of a 9" bottom spring form pan. Refrigerate for 30 minutes until firm.
  • Mix first Jello packet with 1/2 cup of boiling water. Stir until dissolved. Allow to sit at room temperature to cool slightly.
  • Stir cream cheese until fluffy. Add strawberry yogurt and mix well. Add Jello into mixture and stir filling until well blended. Add filling into pan and if wanted lightly lay strawberry's over the top and push in ever so gently so they are in place. Refrigerate for 90 minutes or until firm.
  • Meanwhile prepare second Jello packet as the box directs you. Allow to cool at room temperature until needed.
  • When cheesecake is firm add a layer of Jello over the top (however much you choose to put on is up to you, I tend to put a thin layer on if I haven't used fruit, and a thick one if I have). Again refrigerate until firm (usually about an hour or so).

1 (3 ounce) package strawberry gelatin
2 cups boiling water
4 large peaches, sliced

2 pkg. graham crackers, finely crushed
1/2 cup butter
1 - 3 oz. pkg. lemon jello
1 cup boiling water
1 8-oz pkg. cream cheese, at room temp.
1/2 cup sugar
1 tsp. vanilla
1 lg can Milnot milk (well chilled)
very lg. mixing bowl (well chilled)

Steps:

  • Melt butter in 9x13" pan. Set aside 1/4 cup cracker crumbs. Add remainder of crumbs to butter and mix well. Press into crust and refrigerate. Add jello to boiling water. Stir until dissolved and refrigerate. Cream together cream cheese, sugar, and vanilla with electric mixer. Refrigerate. Shake CHILLED Milnot milk well and pour into CHILLED mixing bowl. Whip with electric mixer to soft peaks. Add cooled jello liquid to creamed mixture and mix until smooth. Gently fold mixture into whipped Milnot. Pour into crust. Lightly sprinke reserved crumbs on top. Chill several hours.

1 cup all-purpose flour
1/4 cup packed brown sugar
1/2 cup unsalted walnuts, chopped (substitute with graham cracker crumbs for nut allergies)
JELLO FILLING:
1 package lemon flavored gelatin Jello, 3 ounces
1 cup boiling water
1 package cream cheese softened, 8 ounces
1 cup sugar
12 ounces Cool Whip
1 package cherry flavored Jello, 6 ounces (any flavor may be used)
2 cups boiling water

Steps:

  • Preheat oven to 350 degrees fahrenheit. Mix together butter, flour, brown sugar and nuts in a stand mixer. Press into a 13 X 9 inch pan; Bake for 15 minutes. Let this cool completely. Mix the lemon gelatin with 1 cup of boiling water. Set aside to cool. Mix together cream cheese, sugar and Cool Whip; add cooled lemon gelatin mixture to the cream cheese mix. Pour this over the crust; refrigerate for 1 hour. NOTE: The cream cheese filling will be light and soft. It will not be as firm as you might expect it to be. Combine cherry gelatin (or your gelatin flavor of choice) and 2 cups of boiling water; cool. Gently spoon the Jello over the cold cream cheese mixture. Refrigerate until cherry gelatin is firm (overnight or up to 4 hours). Slice Jello cheesecake into generous squares and serve!
