Tamale Soup image

I started out wanting to use up some chicken stock, saw the black beans, and went from there. We love enchiladas and tamales and we really enjoy soup for dinner, so I figured the flavors were all there, why wouldn't it be delicious? It was. Got my fussy husband's seal of approval, and, believe me, that's something.

Number Of Ingredients 5

2 can(s) black beans, drained
2 c chicken stock
1 can(s) yellow hominy, undrained
1 can(s) 15 ounce size, crushed tomatoes
1 can(s) 10 ounce size green chile enchilada sauce

Steps:

  • 1. Combine all ingredients and bring them up to a simmer over medium heat.
  • 2. Simmer for 15 - 20 minutes on low heat, covered, stirring occasionally.
  • 3. Grate some sharp cheddar cheese and place it in a bowl for use at the table.
