Linguine With Cherry Tomatoes image

This looks and is so simple, but it will fool you as to how delicious it is. Its because of the sweet cherry tomatoes. Nice meal to make at the heat of the summer when you don't feel much like cooking. A fellow worker gave me the recipe and said make sure you try this !

5 c cherry tomatoes, freshly picked
1 c olive oil, virgin
1/4 c red wine vinegar
salt and pepper to taste
1 1/2 c bread crumbs
1 lb linguine pasta
basil, fresh

Steps:

  • 1. Cut tomatoes in half. Mix together olive oil, vinegar, salt and pepper, whisk well. Marinate cut tomatoes in dressing for at least 2 hours or overnight. Just before serving, cook linguine per package directions. While pasta is boiling, toss the bread crumbs in a bit of olive oil. Warm tomatoes and dressing in a pan over very low heat, just to remove chill. Add pasta to pan and toss with the tomatoes. Serve, garnished with bread crumbs.
  • 2. Hint: The secret of this dish is VERY sweet and Very RIPE tomatoes. If you have large tomatoes, that fit this description, use them quartered. This taste really good served with crumbs made from garlic bread !
