1 Lb Hamburger Meat (turkey or beef)
1/2 Small Yellow Onion (chopped)
2 Medium Jalapeños (chopped )
1 Tsp Onion Powder
1 Tsp Garlic Powder
1/4 Tsp Black Pepper
1 Tsp Brown Sugar
1/4 Cup Cream Cheese
24 Small Wontons

Steps:

  • Preheat oven to 350-degrees
  • In a bowl, combine hamburger meat, chopped onions, chopped jalapeños, onion powder, garlic powder, black pepper, and brown sugar together.
  • Add the mixture to a pan on medium-high. Cook the meat thoroughly, and mix in the cream cheese.
  • Evenly distribute the filling onto the centers of the wontons. Roll them tightly, and add them to a baking sheet. optional* I brushed the leftover grease from the pan onto the tops of the wontons to give them a golden finish
  • Bake for 10-12 minutes.
  • Use ketchup or a creamy aioli for dipping sauce!

2 cups canned sliced jalapenos (with the juice)
1/2 cup sugar
1/4 cup orange marmalade
2 1/2 pounds ground turkey
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons grapeseed oil
6 tablespoons unsalted butter
6 brioche buns
6 leaves green leaf lettuce
6 slices beefsteak tomato
6 slices red onion
12 slices Hass avocado

Steps:

  • For the jalapeno jam: In a small saucepot, combine the jalapenos, sugar and marmalade and bring to a simmer over low heat. Simmer until the liquid reduces to a glaze, about 1 hour.
  • For the turkey burgers: In a bowl, combine the ground turkey, salt and pepper and mix well. Form the mixture into 6 patties.
  • Heat a cast-iron skillet over high heat until it begins to smoke. Add 1 tablespoon of the grapeseed oil to the pan and reduce the heat to medium. Add 3 of the patties to the pan and cook until the first sides are seared, 3 to 5 minutes. Flip and cook until the burgers are cooked completely through, about 5 minutes. Repeat with the remaining tablespoon grapeseed oil and the other 3 burgers.
  • Butter each of the buns on both sides and toast them in the hot skillet until golden brown.
  • Dress each of the bottom halves of the buns with lettuce, tomato, red onion and avocado. Place a burger on top of each dressed bun and top with 2 tablespoons of the jalapeno jam. Finish with a bun top.

1 1/2 pounds lean ground beef (97 percent meat, 3 percent fat)
1 1/2 teaspoons kosher salt
1 teaspoon salt-free Southwestern seasoning blend
Freshly ground black pepper
4 jalapenos
4 slices American cheese
4 whole wheat burger buns, warmed
1 medium red onion, thinly sliced
2 cups thinly shredded iceberg lettuce
Yellow mustard (optional)

Steps:

  • For the grill: Preheat the grill to 400 degrees F or a cast-iron pan over medium-high heat.
  • Crumble the beef into a large bowl. Add the salt, seasoning blend and some pepper. Mix the beef mixture gently with your hands so as to not overmix. Just fold the ground beef, don't mush or squeeze the ingredients into the beef. Form 4 patties.
  • Place the patties and the jalapenos over the direct heat of the grill or into the cast-iron pan. Cook the patties on one side until the meat is seared and releases easily from the grill grates or pan, 3 to 4 minutes. Flip the patties and rotate the jalapenos to get them charred on both sides. Cook until desired doneness on the beef, 3 to 4 more minutes for medium-rare to medium.
  • For the toppings: Top the burgers with the cheese and transfer to a plate or sheet pan. Cover with aluminum foil for about 5 minutes. Meanwhile, remove the charred jalapenos and chop. Spread over the cheese on the burgers.
  • Squeeze mustard on both the top and bottom buns if desired. Build the burgers by topping the bottom buns with the cheeseburgers, jalapenos, a pile of red onions, a pile of lettuce and the top buns. Serve.

3 loaves frozen bread (3 lb) or 3 lbs fresh bread dough
2 tablespoons dry onion flakes
4 cloves garlic, smashed
5 fresh jalapeno peppers, finely chopped or 1 (3 1/2 ounce) jar jalapenos, chopped
1 (2 ounce) jar pimientos, chopped
20 black olives, pitted and minced
1 1/2 cups cheddar cheese, grated

Steps:

  • Allow the frozen dough to rise overnight in the fridge (if using fresh let it rise to double it's size).
  • Knead in your mixer for 5 minutes (by hand 10 minutes).
  • Add all the ingredients to the dough and knead for a further 10 minutes.
  • Cut into 14 equal pieces (more if you want smaller buns).
  • The dough is a bit moist from all the ingredients in it so you may want to use a little flour on your hands to form the buns- do not use too much flour or the buns will not rise as easily Place buns on a baking sheet that has been sprayed with veggie oil.
  • For best results bake the buns on a baking stone, covered with a piece of parchment and lightly sprayed with veggie oil Cover and place in a warm spot until the buns have doubled in size (I place them in the oven with the oven light on this gives a lovely warm, even heated, no breeze place where they can rise undisturbed).
  • This step may take 1-2 hours dependinbg on your dough.
  • Bake in 350F oven for apprx 20-25 minutes.
  • Place on a rack to cool.
  • They freeze well.

1 lb ground beef
6 sweet rolls
4 ounces cream cheese, softened
2 jalapeno peppers, seeded and diced
1/4 cup shredded cheddar cheese
2 tablespoons milk
6 slices of bacon, cooked and chopped
1 tablespoon butter
1 teaspoon minced garlic

Steps:

  • Preheat an outdoor grill.
  • Cut rolls apart and in half if not already. Set into a small baking dish. Remove tops of buns and set aside.
  • Mix cream cheese, peppers, cheddar cheese and milk in a small mixing bowl. Set aside.
  • Place the ground beef into a piece of plastic wrap and roll into a 3-3.5" round cylinder shape. Unroll and slice into six rounds, making six burger patties.
  • Grill on medium high heat until desired doneness, flipping halfway in between cooking. Place burgers on the sweet rolls. Spread the cream cheese mixture onto the burger meat. Sprinkle with bacon.
  • Place the top bun onto each slider and top with garlic mixed with melted butter.
  • Place under the broiler for 2-5 minutes or until tops just begin to brown. Remove and serve immediately.

2 tsp lawry's seasoned salt
1/2 tsp ground pepper
1 tsp garlic powder
3 tsp worcestershire sauce
4 oz cream cheese
1 1/2 c shredded cheddar cheese
2 -4 medium jalapenos
6 slice cooked bacon (or use salad bacon pieces)

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Mix together ground beef, salt, pepper, garlic powder, and Worcestershire sauce.
  • 3. Line a baking sheet with foil. Divide meat into 6 balls. Form the ground beef into a bowl shape.
  • 4. Cut jalapeno into pieces. Mix the cream cheese, jalapenos, bacon and 1 cup of cheddar cheese. Divide into 6 portions and fill each burger bowl with the cream cheese mixture. (save some Bacon and Jalapenos if you desire to top this off after baking)
  • 5. Bake for 30 minutes. Before serving top with additional 1/2 cup of cheddar cheese, bacon or jalapenos (optional).

3 jalapeño peppers
1 oz. PHILADELPHIA Cream Cheese, softened
7 slices KRAFT Big Slice Colby Jack Cheese Slice
11 slices OSCAR MAYER Fully Cooked Thick Cut Bacon
1 tablespoon KRAFT Chipotle Aioli
4 hamburger buns or rolls
lettuce
tomato slices
onion slices

Steps:

  • Remove seeds from jalapenos, cut up and sauté for 5 minutes; set aside.
  • Finely chop three slices of KRAFT Big Slice Colby Jack Cheese and mix with the cream cheese.
  • Add jalapenos and three slices chopped bacon. Mix well and set aside.
  • Form the eight burger portions into thin patties. Make sure they are similar in size.
  • Distribute the jalapeno cheese mixture evenly over four burger patties. Use the remaining patties as tops. Mold together, making sure the edges are crimped tight.
  • Cook on a hot grill. Make sure you don't flip them over too much. Try to cook one side completely before turning. When burgers are about ready, add another slice of Colby Jack cheese on top and let melt.
  • Garnish burger with lettuce, tomato, onion, 2 slices of bacon and aioli.
  • Note: Don't worry if a little stuffing escapes during the cooking process.

BURGER ASSEMBLY:
4 sesame seed buns, halved and toasted
mayonnaise
lettuce
tomatoes, sliced
onion, sliced

Steps:

  • POPPERS: Heat oven to 200°F and line a baking tray with baking paper/foil. Place the cheese inside the jalapeño halves then wrap each with a strip of bacon. Put the poppers on the backing sheet and place in the oven. Allow to bake for 15 minutes until the bacon is crisp, the cheese has melted and the jalapeños are cooked. Remove and set aside. PATTIES: Combine all the ingredients and mix well. Form into 4 burger patties then cook on a grill/hot frying pan until cooked to your liking. Serve the burger patties on the toasted rolls with all the add-ons and top with the jalapeño poppers. Serve immediately.

1 (3/4 ounce) package active dry yeast (2 1/4 teaspoon)
1 cup water, lukewarm
2 tablespoons oil, plus more for greasing bowl (vegetable, canola, or olive)
2 large eggs
3 tablespoons sugar
3 1/4 cups all-purpose flour
1 teaspoon salt
3/4 cup sharp cheddar cheese, shredded
3 large jalapenos, seeded and chopped

Steps:

  • Add warm water to the bowl of your mixer and sprinkle the yeast over top. Let sit 10 minutes, until frothy.
  • Add the, oil, 1 egg, and sugar to the bowl.
  • Add the flour, salt, cheese and jalapeno peppers and mix on medium-low speed with the hook until the dough holds together, about 2 minutes. The dough should clean the sides of the bowl. If not, add additional flour by the tablespoon.
  • Increase speed to medium and knead the dough for 5 minutes.
  • Transfer the dough to a large bowl that has been lightly greased with oil.
  • Cover it with a towel and let rise in a warm place until doubled in bulk, about 1 1/2 hours.
  • Line a baking sheet with parchment.
  • Turn out the dough onto a lightly floured surface.
  • Divide the dough in half and each half into 4-6 pieces (depending on the size of your burgers, typically about 8-9 buns per batch).
  • Roll into rounds and flatten with the palm of your hand onto the baking sheet; placing buns about 1/2-1 inch apart.
  • Cover with a damp towel and let them rise for 20 minutes + oven preheating time.
  • Preheat oven to 350.
  • Whisk the remaining egg with 1 tablespoon water.
  • Brush the buns with the egg wash and bake for 20 to 30 minutes, until golden brown. Let cool minutes before slicing and serving.

I found one of those gadgets to make easy stuffed burgers at Kroger - they are really fun! If you can pick one up they really work well. I decided to turn a favorite appetizer of mine into a burger. Yummy!

1 pound(s) ground beef, 80/30
2 ounce(s) cream cheese softened
4 ounce(s) sharp cheddar cheese grated
1 - pickled jalapeno, finely diced
4 slice(s) applewood smoked bacon, cooked
2 slice(s) tomato
4 - lettuce leaves
- onion slices
2 tablespoon(s) mayo
1 tablespoon(s) ranch seasoning
- salt and pepper to taste

Steps:

  • In a small bowl mix cream cheese and shredded cheddar.
  • Divide ground beef in half for each burger set one half aside. To create your stuffed burger take 1/3 of the portion and set aside for the top. Place the 2/3 portion in the burger form press with the burger press to create a "bowl". Fill with half of the cheese mixture and top with half of the jalapeno. Top with remaining 1/3 of ground beef and press making sure filling is completely covered. Repeat for other burger. Let rest in refrigerator covered with plastic wrap.
  • Prepare grill and let burgers rest on the counter while grill is heating up. Salt and pepper both sides of burgers as desired. Cook for 6 minutes on each side.
  • While burgers are cooking mix mayo and ranch seasoning in a small bowl.
  • Assemble burger with your favorite veggies - I chose lettuce, tomato and onion. Spread ranch equally between burgers and top with bacon.
  • Here is a picture of the gadget I found. It's "Good Cook" brand. I found it at Kroger it's a stuffed burger press.
