BRATWURST CASSEROLE - MEAL IN ONE
Johnsonville Brats were on sale and I love them so I opened my cupboard doors and out came this recipe. I Challenge those of you that do not like Sauerkraut to try this recipe - I'll bet you'll say" Hey that ole Kraut isn't half bad!". This is easy to make, very little preparation and the bake time is 45 minutes where you can be doing other things. A small green salad will go well along side

Steps:
- Boil your carrots and potatoes until they are almost tender; drain well.
- Put your brats in a skillet lightly prick them, pour in the beer, cover and simmer turning them once until the beer has evaporated.
- Finish browning the brats, remove and place them in an oven proof baking dish 8x8x2-inch or something similar.
- Return the skillet to medium heat add 1 tbs veggie oil and saute the onions until golden, add kraut, chili flakes, brown sugar, paprika, salt and pepper. Mix well scrapping all the bits of brown from the bottom of the pan.
- Your kraut mixture should now be a golden color. Add carrots and potatoes to the Brats; cover with the sauerkraut mixture, seal with foil.
- Bake in a 350°F over for 30- 45 minutes.
- Serve with Sweet Bavarian Mustard on the side.

DELICIOUS BRAT CASSEROLE
You can use bratwurst, Italian sausage, polska kielbasa, weisswurst, or even breakfast sausage for this recipe. It's a delicious way to use up those extra brats in your freezer, and tastes wonderful in the winter when grilling season seems far, far away.

- Sauté celery and onion in small amount of olive oil or vegetable oil until partially done, about 5-8 minutes. Set aside.
- Using the same pan you used for the celery, cook the brat pieces over medium high heat until no pink remains and they are cooked through. Drain off any grease.
- In a well buttered 2-quart casserole dish, layer potatoes, then brats, then celery and onions, then green beans.
- Mix the milk with the soup, stir well to combine, and pour over layered ingredients in the casserole dish.
- Bake at 375° for 1 hour 30 minutes, uncovered.
- If desired, increase the amount of brats for a meatier meal.

BRATWURST AND SAUERKRAUT CASSEROLE
This is good used with Bavarian sauerkraut for a sweeter taste. Put in crock pot and forget about it. My mother made this first then passed the recipe to me. It originated from American Profile Magazine.

- Preheat oven to 350°. I put mine in the crockpot.
- Drain and rinse sauerkraut in a colander.
- Mix with all the ingredients in a bowl and pour into large casserole dish (or put in crockpot) Cover and bake for 1 1/4 to 1 1/2 hours.
- Or let cook in crockpot on low for several hours until potatoes are tender. I usually add 1 can of water and mix well. Add more water accordingly throughout the day.
- I let mine cook all day on low.
- You can also try substituting the brown sugar with applesauce and apple chunks (1/2 cup each) for color and texture.
- I also use the Bavarian kraut--this gives this dish a sweeter flavor--even my kids like it.
BRATWURST CASSEROLE
Quick and different casserole. Great way to use left over potatoes (I like to bake extra and use them instead of boiling). You can add mushrooms and top with french fried onions too. Garlic brats add a special zing!

- Preheat oven to 400.
- Brown brats, onions and celery over medium heat, stirring occasionally about 5 - 7 minutes until sausage is browned and onions are golden.
- Spray 2-qt casserole dish. Put brats in it. Add in everything else except peppers and parsley. Stir well. Cover tightly and bake 30 minute.
- Uncover. Stir in peppers. Bake 15 minutes more. Sprinkle with parsley and serve.

My family loves Bratwurst and potluck potato casserole during summer picnics and get togethers. I combined two family favorites into this hearty rib sticking cold weather casserole.

- Remove bratwurst from casing and brown draining fat.
- Preheat oven to 350 degrees with oven rack placed in the center of the oven.
- Defrost potatoes. Combine in large mixing bowl with 1/2 cup melted butter, and seasoning.Add onion, soup, sour cream, cheese, garlic & spices and bratwurst. Blend thoroughly. Pour into buttered casserole. Cover with crumbs. Bake 45 minutes.
