LYNN'S ITALIAN MEAT PIE

1 1/4 c flour
1 stick unsalted butter
2-6 tsp water
FILLING
1 lb lean ground beef
1 lb italian sausage
2-3 slice prosciutto
1/2 tsp dried basil
1/2 tsp italian seasoning
3 clove garlic, grated or minced
1/2 sweet onion, diced
8 oz fresh mozzarella, sliced
8 oz bruschetta jack cheese, or any italian, grated
2 oz fresh parmesan, grated
**good quality marinara or pasta sauce

Steps:

  • 1. Prepare pie crust and refrigerate while cooking meat.
  • 2. Place ground beef, Italian sausage, garlic and onion in skillet till meat is browned. Drain any excess grease. Add enough sauce to pan to make the meat moist, but NOT soupy or saucy.
  • 3. Add Italian seasoning and basil. Simmer for 10 min. Meanwhile roll out pie crust large enough to fit in a 12" deep dish skillet or pan.
  • 4. Place a large piece of parchment paper in bottom of pan, this will allow for easier removal, unless using a springform pan. Place dough in pan, I used a cast iron skillet. Make sure dough comes almost all the way up the sides of the pan.
  • 5. Spoon in just enough sauce (not meat mixture) to barely cover bottom.
  • 6. Add slices of fresh mozzarella. Spoon in all of meat mixture.
  • 7. Top with Bruschetta Jack cheese (or your favorite Italian blend). Tears pieces of prosciutto and drop on top of pie as well as Parmesan cheese.
  • 8. Bake 375° for 50 min. Allow to cool for 15-20 min before removing from pan.

One of my family's favorite comfort foods is the lowly meat pie. Lowly? It's actually full of flavor and, if made right, looks delicious as well.

1 pound ground beef
½ pound ground pork
1 large onion, chopped
1 green bell pepper, chopped
2 stalks celery, finely diced
3 cloves garlic, minced
1 small carrot, finely chopped
1 large baking potato, peeled and finely chopped
1 bay leaf
1 teaspoon dried thyme leaves
2 tablespoons chopped fresh parsley
1 teaspoon Worcestershire sauce
salt-free seasoning blend to taste
salt and pepper to taste
2 beef bouillon cubes
1 cup hot water
2 cups shredded mild Cheddar cheese
2 sheets frozen puff pastry, thawed
1 egg yolk
1 tablespoon water

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x13-inch dish with cooking spray.
  • Heat a large nonstick skillet over medium-high heat and stir in the ground beef and ground pork. Cook and stir until the meat is crumbly, evenly browned, and no longer pink. Drain and discard any excess grease. Stir in the onion, bell pepper, and celery. Cover and reduce the heat to medium; cook, stirring frequently, until the vegetables have softened and the onion is translucent, about 5 minutes.
  • Make a well in the center of the skillet and put the minced garlic directly on the bottom of the pan. Cook for 30 to 60 seconds or until fragrant, and then blend the garlic with the meat mixture. Add the carrot, potato, bay leaf, thyme, parsley, Worcestershire sauce, seasoning blend, and salt and pepper.
  • Dissolve the bouillon cubes in the hot water in a bowl, and pour it into the meat mixture; mix well. Bring to a boil, reduce the heat to low, cover, and simmer until the carrots are soft, 10 to 15 minutes.
  • Lay one sheet of puff pastry in the prepared baking dish. Gently press the pastry into the corners and up the sides of the dish. With a slotted spoon, transfer the meat into the crust and spread evenly. Avoid adding liquid to the pie. Top with Cheddar cheese.
  • Whisk together the egg yolk and 1 tablespoon water. Brush the edges of the bottom puff pastry sheet. Lay the second sheet of puff pastry over the baking dish, pressing with a fork to seal the edges. Brush the surface with egg wash and pierce with a fork several times to vent the crust.
  • Bake in the preheated oven until the pastry is golden brown and the filling is bubbling, about 50 minutes. Check after 15 minutes to prevent over-browning (tent with aluminum foil, if necessary). Remove the pie from the oven and let stand for 10 minutes before serving.

ITALIAN PIZZERIA-STYLE MEAT PIE

This recipe was originally posted in my hometown Newspaper (Lawrence, MA), back in the 70s. The original recipe was lost, but with the help of my Mother, we've recreated it here. Note; the use of frozen bread dough is original to the authentic recipe.

1 lb ground beef
1/2 lb ground pork
1 large onion (diced)
1 large bell pepper (diced)
2 garlic cloves (finely minced)
1 (16 ounce) can diced tomatoes
1 (8 ounce) can tomato sauce
1 teaspoon oregano
1 teaspoon basil
1/2 teaspoon marjoram
2 loaves frozen bread dough (thawed)

Steps:

  • Brown beef and pork.
  • Add onions and Peppers and saute till onions are slightly browned. Add garlic and saute.
  • Add all other ingredients except dough, and simmer till thickened.
  • Roll out 1 loaf of dough to fit a lightly greased cookie sheet.
  • Using a slotted spoon spread the meat mixture on top.
  • Roll out the second loaf.
  • Place this sheet on top and seal the edges.
  • Poke a few vent holes in the crust.
  • Brush the top completely with the fat drippings.
  • Bake at the temp reccomended for the bread dough, till golden brown.
  • Allow to cool slightly before cutting with a bread knife. (the inside will look slightly doughy).

IMPOSSIBLY EASY ITALIAN SAUSAGE PIE

1/2 lb bulk Italian pork sausage
2 cups frozen mixed vegetables, thawed, well drained
1/2 cup Original Bisquick™ mix
1 cup milk
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs

Steps:

  • Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray. In 10-inch skillet, cook sausage over medium heat 8 to 10 minutes, stirring occasionally, until no longer pink; drain. Spread sausage in pie plate. Sprinkle with vegetables.
  • In medium bowl, stir remaining ingredients until blended. Pour into pie plate.
  • Bake 30 to 35 minutes or until top is golden brown and knife inserted in center comes out clean. Let stand 5 minutes before serving.

2 tablespoons olive oil
¼ cup chopped prosciutto
2 tablespoons chopped fresh sage
2 tablespoons chopped fresh parsley
2 tablespoons chopped oil-packed sun-dried tomatoes
¼ cup chopped onion
1 ½ pounds pork tenderloin, cut into 1/2 inch strips
½ cup chicken broth
½ cup heavy cream
¼ teaspoon salt
½ teaspoon ground black pepper

Steps:

  • Heat the oil in a skillet over medium-high heat. Saute the prosciutto, sage, parsley, sun-dried tomatoes, and onion 5 minutes, until onion is tender. Mix the pork strips into the skillet, and brown about 10 minutes, turning once.
  • Stir the broth and heavy cream into the skillet, and season with salt and pepper. Bring to a boil. Reduce heat to low, and simmer 20 minutes, stirring occasionally, until pork reaches a minimum temperature of 145 degrees F (63 degrees C) and sauce is thickened.

ITALIAN BRAISED PORK

2 tablespoons olive oil
2 1/2 pounds boneless pork shoulder
Coarse salt and pepper
1 large yellow onion, diced small
3 cloves garlic, minced
1 stalk celery, diced small
3/4 teaspoon fennel seeds
1/2 cup dry red wine, such as Cabernet Sauvignon or Merlot
1 can (28 ounces) crushed tomatoes
4 cups prepared couscous, for serving

Steps:

  • In a large skillet, heat oil over medium-high. Season pork with salt and pepper and cook, turning occasionally, until browned on all sides, about 8 minutes. Transfer pork to a 5- to 6-quart slow cooker. Reduce heat to medium and add onion, garlic, celery, and fennel seeds to pan; cook until onion is softened, about 4 minutes.
  • Add wine and cook, scraping up browned bits with a wooden spoon, until reduced by half, about 2 minutes. Add to slow cooker along with tomatoes. Cover and cook on high until pork is very tender, 4 hours (or 8 hours on low).
  • Transfer pork to a cutting board. With 2 forks, shred meat into bite-size pieces, discarding any large pieces of fat. Skim fat off sauce and discard. Return shredded pork to slow cooker and stir to combine. (To store: Cool, cover, and refrigerate up to 3 days.) Serve over couscous.
