Steps:
- Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Return the drained potatoes to the pot.
- Pour the vegetable broth, thyme, rosemary, oregano, basil, onion powder, parsley, sage, and garlic over the potatoes; mash with a potato masher.

- Boil potatoes in salted water until tender, then drain and mash.
- Stir in butter, sour cream, chives, seasoned salt and pepper.
- Butter and lightly flour a 9" deep pie plate.
- Spread in mashed potatoes.
- Arrange 6 oz mozzarella cheese on top of potatoes.
- Top with tomatoes and sprinkle with basil and oregano.
- Top with remaining mozzarella, Parmesan cheese and drizzle with melted butter.
- Bake at 425° for 25 to 30 minutes.
- Cool slightly before cutting.

MASHED POTATO PIE
This pie is supposed to have a French pedigree, but I got it from my all-American Mom and it is our family's favorite. It is wonderful served hot or at room temperature. It is most tasty prepared with real mashed potatoes, but if you need to save time, instant mashed potatoes are just fine.

- Brush the piecrust with a beaten egg and bake for 9 minutes at 450 degrees. This is an OPTIONAL step, but will assure a non-soggy crust.
- Pre-heat the oven to 425 degrees.
- Using a spoon, beat the mashed potatoes into the cottage cheese. (Do not use a mixer, or the potatoes will turn glue-y.).
- Beat in the sour cream, eggs, salt and cayenne pepper.
- Stir in the green onions.
- Spoon the mixture into the pastry shell.
- Sprinkle with the grated cheese.
- Bake for 50 minutes until golden brown.

I don't know where this recipe originated, but it has been an old stand by on my mom's dinner party tables for years. It actually bakes up to look quite impressive. Please don't try to substitute fresh mashed potatoes (believe me I have tried) the instant box stuff provides the perfect texture.

- Make mashed potatoes according to package directions for 7-8 servings.
- Stir garlic powder, eggs, Parmesan and one cup of the mozzarella into prepared potatoes.
- Pile mixture into a 9-inch deep dish pie plate.

BRITISH FISH PIE WITH MASHED POTATO TOPPING
This British fish pie is comforting, creamy, chock full of tender seafood, and topped with a pile of fluffy potatoes. I especially liked the big chunks of cod and salmon! The sauce isn't heavy or rich, even though it's really thick and stick to your ribs in texture. It's mildly seasoned, so you can really just enjoy the flavor of the seafood tucked inside.

- Place cubed potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Drain.
- Transfer potato cubes to the bowl of a stand mixer. Blend gently, adding cubed butter and milk. Add in eggs and mix only until mashed potatoes reach your desired consistency, or finish by hand if needed;overmixing will yield gluey potatoes. Season with salt and pepper.
- Preheat the oven to 400 degrees F (200 degrees C).
- While potatoes are boiling, heat butter and olive oil in a large skillet over medium heat. Add onion and thyme and saute until onions are soft and browned, about 5 minutes. Deglaze with vermouth and cook until alcohol has evaporated, about 2 minutes. Whisk in flour. Slowly whisk in stock and milk and bring to a simmer. Simmer for 1 to 2 minutes. Sauce should be fairly thick, but if it's too thick you can thin it out with a little bit of additional stock. Taste and season with salt and pepper if desired. Turn off heat and stir in the half-and-half and parsley.
- Scatter salmon, cod pieces, and shrimp onto the bottom of a 2-quart baking dish. Sprinkle lightly with salt and pepper. Drizzle lemon juice over the top of the seafood.
- Pour prepared sauce over seafood and stir gently to combine. Spread prepared potatoes over the top and fluff with a fork, then sprinkle Cheddar cheese over the top.
- Bake in the preheated oven for 10 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake until potatoes are evenly browned all over, seafood is cooked through, and pie is bubbly and piping hot, about 20 more minutes.
- Remove from the oven and allow to rest for 10 minutes before serving.

- If you happen to use larger potatoes for the double batch, halve the large potatoes because the small ones for the regualr batch can be left whole.
- Place all the potatoes in a deep pot and cover with water.
- Place a lid on the potatoes and bring it to a boil.
- Once it starts to boil, uncover and cook until tender (about twelve to fifteen minutes).
- Then drain potatoes and put them back into the hot pot.
- Add the butter, the seasoning package, milk and cheese. It really depends on how creamy and cheesy you like your potatoes when deciding how much you want to add of the milk and cheese.
- Smash the potatoes until they are the desired texture.
- Add the amount of salt and pepper to taste you like and enjoy.

MOM'S TWO-CRUST POTATO PIE
I grew up in a Catholic family, when Catholics could not eat meat on Fridays. Fish and a side dish were Friday meals. One particularly favorite side-dish was this recipe. Hearty, filling and delicious! Cubed ham and finely chopped onions can be added to the potato and cheese mixture if you want more of a one-dish meal. Use American, muenster, havarti, or brie cheese. - Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. - Mash potatoes and garlic together and add 6 tablespoons of the butter and then add the milk.
- Mash until potatoes are smooth.
- Add salt and pepper to taste.

- Place potatoes in 4-quart saucepan; add enough water to cover potatoes. Add 1 teaspoon salt. Heat to boiling; reduce heat. Simmer uncovered 20 to 30 minutes or until tender; drain. Mash with potato masher or electric mixer on low speed.
- While potatoes are cooking, melt butter in 1-quart saucepan over medium-low heat. Cook garlic in butter 3 to 4 minutes, stirring frequently and being careful not to brown butter, until garlic is very soft. Stir in milk and herbs. Cook until thoroughly heated.
