2 teaspoons dried marjoram
1 1/2 teaspoons salt

2 lbs beef stew meat, cut into 1 inch cubes
1/2 cup beef broth
1/4 cup red wine
1/4 cup tomato paste
4 teaspoons ground paprika
2 garlic cloves, minced
2 tablespoons sour cream
8 ounces egg noodles

Steps:

  • Place onions and carrots in crock pot.
  • Combine next four ingredients; toss beef with this mixture and add to crock pot.
  • Combine broth, wine, tomato paste, paprika and garlic; pour over beef.
  • Cover crock pot and cook 7-8 hours on low.
  • When stew is ready cook noodles and transfer to platter.
  • Stir sour cream into stew.
  • Top noodles with stew.

8 slices bacon, chopped
2 large onions, thinly sliced, about 1 1/2 cups
1 tablespoon chopped garlic
2 pounds beef shank or chuck, cut into stew meat
Salt and pepper
3 tablespoons hot Hungarian paprika
1 teaspoon ground marjoram
1 teaspoon lemon zest
1/4 cup white wine vinegar
1/2 cup white wine
1 cup tomato puree
2 cups beef broth
1 cup diced potatoes

Steps:

  • In the bottom of a heavy casserole saute the chopped bacon to render the fat. Add the onion to the bacon fat and brown until golden. Stir in the garlic but do not burn. Quickly add the beef in one layer, season with salt and pepper and brown all sides well.
  • Sprinkle the paprika, marjoram and lemon zest in and quickly stir to coat the meat evenly.
  • Add vinegar and wine and cook until nearly dry.
  • Add the tomato and broth, bring to a boil quickly before lowering the heat to a simmer and cook gently for 45 minutes. Add the potatoes. Continue to cook for an additional 20 minutes before serving with buttered noodles.

We made it here and it was superb, it tasted just like my mom's. The timing is what may need adjusting, even though we made it - I honestly could not tell how long it took. I also added a few "modern methods" to the cooking and making of the spaetzle.

2 tablespoons extra virgin olive oil
4 cups onions, thinly sliced
1 tablespoon sugar
3 garlic cloves, minced
2 tablespoons caraway seeds, toasted and ground
4 slices bacon, chopped
2 1/2 lbs beef shank or 2 1/2 lbs beef shoulder, cut into 2-inch cubes
kosher salt
fresh ground black pepper
3 tablespoons all-purpose flour
2 roasted red peppers, peeled and sliced

Steps:

  • GOULASH:.
  • In a large heavy pot over medium heat add the bacon and fry for about 5 minutes until crisp and remove to paper towel and reserve.
  • Sauté the onions and sugar until caramelized.
  • Add the garlic and caraway seed.
  • Cook for one minute.
  • Add the sweet paprika, thyme(if using), marjoram(if using), and bay leaf.
  • Sauté another minute, until fragrant.
  • Add the tomatoes, red peppers, and 3 cups of broth.
  • Bring to a boil and then simmer 10 minutes.
  • Remove bay leaf.
  • In a Dutch oven, add the oil and sauté the beef and brown evenly on all sides, turning with tongs; season generously with salt and pepper.
  • While beef is searing, sprinkle the flour evenly in the pot and continue to stir to dissolve any clumps.
  • Deglaze with vinegar and the remaining broth.
  • Pour the contents of the other pan into Dutch oven and bring to a boil, then lower to simmer and cook about 1-1/2 hours until very tender, stirring occasionally.
  • Taste and adjust the seasoning.
  • Remove from heat and stir the sour cream into the goulash just before serving.
  • Garnish with chopped parsley and broken pieces of crispy bacon.
  • Serve with freshly made spaetzle.
  • SPAETZLE:.
  • In a small bowl, beat together the egg yolks, egg and milk.
  • In a medium bowl, combine the flour, nutmeg, salt, and pepper.
  • Add the egg mixture to the flour mixture and mix with hand until well blended.
  • Do not overmix at this stage.
  • Cover the bowl and refrigerate.
  • Allow the batter to rest for at least 1 hours.
  • Bring salted water to a boil.
  • Place the batter on the end of a cutting board and cut small slices of batter into the water.
  • Cook for 4-5 minutes, until done.
  • Transfer cooked spaetzle to a bowl, with a strainer.
  • OR (edited 02/26/06)Place a perforated hotel pan on on top of the pot. Place the batter on the pan and force it through the holes to form spaetzles. Cook 4-5 minutes. Transfer the spaetzle to a different bowl with a strainer.
  • Over high heat, place a large sauté pan until it gets very hot.
  • Add butter and the boiled spaetzle.
  • Sauté until golden.
  • Season to taste with salt and pepper.
  • Serve with the goulash all in one large platter(the spaetzle all round and the goulash in the middle) sprinkle with a generous amount of parsley, over the goulash as well as the spaetzle.
  • Serve with warm loaf of bread so as to sop up all that yummy gravy.

1/4 cup all-purpose flour
1 tablespoon sweet Hungarian paprika
1 1/2 teaspoons salt
1/2 teaspoon hot Hungarian paprika

2 lbs beef stew meat, cut into 1 1/4-inch pieces
4 tablespoons vegetable oil, divided
1 large onion, chopped
2 garlic cloves, minced
28 ounces beef broth
14 1/2 ounces stewed tomatoes, undrained
1 cup water
1 tablespoon dried marjoram, crushed
3 cups medium egg noodles, uncooked (about 6 ounces)
1 large green bell pepper, chopped
sour cream

Steps:

  • Combine flour, sweet paprika, salt, hot paprika and black pepper in resealable plastic food storage bag. Add 1/2 of beef. Seal bag; shake to coat well. Repeat with remaining beef.
  • Heat 1 1/2 tablespoons oil in Dutch oven over medium heat. Add one-half of beef; brown on all sides. Transfer to large bowl. Repeat browning with 1 1/2 tablespoons oil and remaining beef; transfer to same bowl.
  • Heat remaining 1 tablespoon oil in same Dutch oven; add onion and cook 8 minutes or until tender. Add minced garlic cloves and cook for 2-3 more minutes, stirring often.
  • Return beef and any juices to Dutch oven. Add broth, tomatoes with liquid, water and marjoram. Bring to a boil over medium-high heat. Reduce heat to medium-low; cover and simmer 1 1/2 hours or until meat is tender, stirring once.
  • When meat is tender, stir in noodles and bell pepper; cover. Simmer about 8 minutes or until noodles are tender, stirring once. To serve, ladle into 8 soup bowls. Dollop with sour cream.

2 lb stewing beef (chuck or boneless short ribs)
1 or more large onions (about 1/2-2/3 pound), diced
2 hot Hungarian wax pepeprs/banana peppers, diced
2 teaspoons Hungarian sweet paprika (or mix of sweet & hot)
1 tablespoon oil or lard
1 tablesppon tomato paste (optional)
1-2 cloves garlic (optional)
1 teaspoon ground caraway seed (optional)
salt & pepper to taste

Steps:

  • Cut beef into bite-sized 1" cubes. Brown meat over high heat in lard or oil. Remove. Add diced onions and peppers. Fry until onions are translucent. Add garlic and ground caraway seeds, if using, and fry for two minutes. Turn down heat to low, add paprika (be careful not to burn) and fry in oil for 1 minute, until evenly distributed. Add browned meat (and any reserved juices), and half cup water to prevent burning. Set heat to lowest setting, cover, and let simmer for two hours or until tender. The meat will release its juices and make its own gravy as it cooks down. If the resulting gravy is not thick enough, add up to 1 tablespoon tomato paste to thicken. Salt and pepper to taste. I had been searching for a good goulash recipe for quite some time, and finally made my own from bits of several others. No potatoes in this one (my crock-pot usually doesn't get them tender enough). It will need salt at the end or at the table - I cook with very little salt and add it at the end because many of my friends need low-sodium food. My SO has been telling people 'It was GOOD goulash' for days since I made it. Enjoy!

3 lbs beef stew meat
1/2 cup flour
1 teaspoon salt
1/4 teaspoon pepper
2 tablespoons paprika
1/8 teaspoon cayenne
1 large onion, diced
1 garlic clove, minced
1 cup tomato puree
2 tablespoons Worcestershire sauce
8 ounces sliced mushrooms
1 tablespoon brown sugar
1 1/2 teaspoons dry mustard
2 tablespoons lemon juice
1 cup beef stock
1 tablespoon flour
1 tablespoon butter, at room temperature
1 teaspoon salt (to taste)

Steps:

  • Blot meat cubes dry and dredge with flour mixed with salt and pepper.
  • Heat oil in large skillet; brown meat cubes. Drain off excess fat. Brown meat in batches if necessary.
  • Place meat in crock-pot. Sprinkle meat with paprika and cayenne, stirring and turning cubes to season evenly.
  • Add onions and garlic to crock-pot.
  • Combine tomato puree, Worcestershire sauce, mushrooms, brown sugar, dry mustard, lemon juice and beef stock. Blend. Pour over meat.
  • Cover and cook on low for 6 to 8 hours.
  • Knead butter with flour to make a paste. Add to crockpot and stir well. Cook on high 15 minutes or until thickened.
  • Add salt at end of cooking, or salt to taste at table.

This recipe is the original way that my father showed me how to prepare Hungarian beef goulash and it is a beautiful dish. Accompanied with rice or potato, it is a complete meal with all flavoursome taste of Hungarian cooking.

800 g diced beef
2 tablespoons oil
3 onions, diced finely
1 tablespoon sweet Hungarian paprika
3 tomatoes, diced finely
1/2 red capsicum, diced finely
1/2 cup red wine

Steps:

  • Heat oil in a deep frypan and cook onions on a medium heat until soft and translucent. Remove from heat and allow to cool slightly.
  • Add paprika to onion and stir through.
  • Add diced meat to mixture and coat and marinade the mixture whilst you prepare the tomato and capsicum. Make sure you keep the juice from the tomato to add to the dish.
  • Stir in the tomato and capsicum and return to a medium/high heat and allow to cook for a few minutes on this heat before reducing the heat to medium/low. Cover with a lid for this to cook.
  • After 15 minutes, add the wine and salt, stir and simmer for 1 hour at least with a cover/lid, stirring occasionally.
  • NOTE: do not brown the meat before adding to the onions -- it must marinade and cook with the vegetables so the juices create a nice flavorsome gravy.
  • Serve with mashed potato or boiled rice and a simple side salad of lettuce and vinegar.

2 1/2 lb beef blade roast or beef chuck roast, cut into 2-inch cubes
1/4 c unbleached all-purpose flour
1/2 tsp hot paprika
2 Tbsp olive oil
4 c white onions, chopped in chunks
1 1/2 c red peppers, chopped in chunks
1 1/2 c green peppers, chopped in chunks
1/4 tsp ground himalayan sea salt, or more to taste
1 1/2 Tbsp mild paprika
1/2 Tbsp smoked paprika
2 tsp ground caraway seeds
1 tsp marjoram
1/2 tsp ground thyme
1/4 tsp cayenne pepper, or more to taste
freshly ground black pepper, to taste (i always use mixed peppercorns)
1/4 c dry red wine
4 c low-sodium beef broth
1/4 c tomato paste
3 large cloves garlic, minced
1 Tbsp balsamic vinegar
1 tsp granulated sugar
1 large bay leaf
dollops of light sour cream, for garnish
fresh chopped parsley, for garnish
egg noodles or mashed potatoes

Steps:

  • 1. In a small bowl, combine flour and hot paprika. Transfer to a fine sieve and sprinkle over beef cubes to coat. In a large deep skillet over high, heat vegetable oil. Working in batches, add cubes and cook until just start to brow, about 2 minutes. Using a slotted spoon, transfer to a large bowl while cooking the remaining cubes.
  • 2. Return skillet to medium heat, add onions and peppers; sprinkle sea salt and cook until softened, about 5 minutes. Transfer to bowl with beef using a slotted spoon. Let the skillet to cool off a little before returning on medium-low heat.
  • 3. Using a spice grinder, crush caraway seeds, transfer to skillet along with mild paprika, smoked paprika, marjoram, thyme, cayenne and freshly ground black pepper. Toast spices, stirring constantly, for about 2 minutes. Pour in red wine and stir until it forms a paste. Add 1 cup beef broth, stirring the bottom to remove any particles of foods/spices and the paste is gone. Increase the heat to medium and add tomato paste; stir until dissolved. Add garlic, stir and when start to simmer again, re transfer meat and vegetable back to skillet. Pour in the remaining broth and add balsamic vinegar, sugar, and bay leaf; stir and increase heat to high to bring to a boil.
  • 4. Reduce heat and maintain a steady simmer; cook for 1 ½ to 2 hours or until meat is tender. During cooking, skim off fat on top; discard. If liquid level is low, add a splash of stock. About 1 ½ hours, test meat tenderness and seasoning. Finish on medium heat to reduce sauce for about 30 minutes. Remove and discard bay leaf before serving.

BEEF BRISKET HUNGARIAN GOULASH



Beef Brisket Hungarian Goulash image

This is not your regular goulash. There is a hint of garlic to the dish and a thinner sauce that brings a sweeter taste to the brisket. The meat is tender and the noodles a bit firmer when served.

Number Of Ingredients 9

2 TBS lard
2 large onions, finely sliced
1 bunch chopped scallions
2 lbs beef brisket, cut into 1-inch cubes
2 TBS Hungarian paprika
1 cup water, or as needed
2 cups mushrooms, sliced
1 lb fettuccine noodles
1 pinch salt and pepper to taste

Steps:

  • Melt lard in a large pot over medium heat. Cook and stir onions in hot lard until soft and translucent, 5 to 8 minutes.
  • Stir beef and paprika into onions. Reduce heat to low and simmer for 1 hour, stirring occasionally.
  • Add mushrooms, 1 cup water and simmer, adding more water if moisture gets too low, until meat falls apart and onion sauce is thick, about 1 hour more. Season with salt and pepper to taste.
  • Boil fettuccine noodles 8-13 minutes. Drain.
  • Add goulash over noodles. Top with sour cream And scallions as desired.
