1 cup pineapple juice
1/3 cup soy sauce
1/2 cup ketchup
1 tablespoon rice vinegar
1/3 cup packed brown sugar
2 cloves fresh garlic, finely chopped or grated
1 tablespoon grated gingerroot
1 to 2 tablespoons Sriracha sauce
2 lb boneless skinless chicken thighs or breasts
1 can (16 oz) crushed or diced pineapple, drained, juice reserved
Chopped fresh cilantro, if desired

Steps:

  • In 5- to 6-quart slow cooker, mix pineapple juice, soy sauce, ketchup, rice vinegar, brown sugar, garlic, gingerroot and Sriracha sauce. Add chicken and crushed pineapple.
  • Cover and cook on Low heat setting 6 to 8 hours or High heat setting 4 to 6 hours. Once chicken is cooked through and sauce thickened, remove chicken; shred with 2 forks. Return chicken to sauce, and turn heat to High. Cook, uncovered, 25 to 30 minutes or until sauce is thickened. If sauce gets too thick, add the reserved pineapple juice from the can.
  • Serve warm over a bed of rice with a side of pineapple salsa, if desired, and chopped fresh cilantro.

12 bacon strips
4 skinless boneless chicken breasts (about 2 pounds)
1/4 teaspoon salt
1/8 teaspoon pepper
1/2 cup chopped red onion
20 ounces crushed pineapple, drained
1 cup bbq sauce

Steps:

  • Cook 8 slices of bacon until cooked but not crisp. Drain well on paper towels.
  • Season each chicken breast with salt and pepper. Then wrap each chicken breast with 2 strips of bacon and place in crock pot. Top with onion, crushed pineapple, and bbq sauce.
  • Cover and cook on low for 4 to 5 hours or until chicken is tender. Cook remaining bacon until crisp. Drain and crumble the bacon and sprinkle over each serving.

1 package (20 oz) boneless skinless chicken thighs, patted dry
2 cans (8 oz each) crushed or diced pineapple, drained
1/3 cup packed brown sugar
1/3 cup ketchup
1 tablespoon rice vinegar
1 to 2 tablespoons Sriracha sauce
2 tablespoons cornstarch
Chopped fresh cilantro leaves, if desired

Steps:

  • In medium bowl, mix pineapple juice, soy sauce, garlic and gingerroot; set aside.
  • On 6-quart Instant Pot®, select SAUTE; adjust to normal. Heat butter in insert. Add chicken; cook 8 to 10 minutes, turning once, until browned. Pour pineapple juice mixture over chicken; turn chicken to coat. Select CANCEL.
  • Secure lid; set pressure valve to SEALING. Select MANUAL; cook on high pressure 3 minutes. Select CANCEL. Set pressure valve to VENTING to quick-release pressure. Transfer chicken to cutting board to cool slightly, then shred with two forks. Return chicken to mixture in insert.
  • Meanwhile, in medium bowl, mix pineapple, brown sugar, ketchup, rice vinegar, Sriracha sauce and cornstarch. Stir into chicken mixture. Select SAUTE; adjust to normal. Heat mixture in insert to boiling. Cook and stir 1 minute.
  • If desired, serve warm over a bed of rice topped with cilantro.

Toss everything in the crock pot (even frozen chicken breasts!) and come home to a complete meal that just needs to be served over rice. This was an entry in RSC #13. Enjoy!

1/2 cup honey
1/2 cup soy sauce
1/4 cup brown sugar
1/2 teaspoon garlic powder
1/2 teaspoon dried ginger
2 teaspoons chicken bouillon
6 boneless skinless chicken breasts (can use frozen, see below)
1 (19 ounce) can pineapple chunks, reserve juice
2 cups baby carrots, cut in half

Steps:

  • Pour honey, soy sauce, brown sugar, garlic powder, ginger, bouillon and pineapple juice in the crock pot and stir.
  • Lay chicken on bottom of pot and cover with carrots and pineapple chunks.
  • Cook in your crock pot for 4-6 hours on low or 3-4 on high. If you are using frozen chicken breast, just add another hour on low or 1/2 hour on high.
  • I actually like the thinner sauce for this one. A reviewer suggested thickening the sauce, so I will include CarrolJ's recommendation - after the meat, carrots and pineapple are removed, add 1/2 cup of water mixed with 4 Tablespoons of cornstarch. Then cook the sauce until thickened and smooth.

This was the featured recipe on Rachael Ray today. I've been experimenting with cast iron cooking, so this adapted perfectly. (Rachael didn't use cast iron.) Plus, I had most of the ingredients already! Hubby called this "a keeper"!

2 boneless skinless chicken breasts
4 slices deli ham
1/2 cup shredded low-fat white cheddar cheese
3 tablespoons extra virgin olive oil, divided
salt
pepper
flour (for dredging)
2 slices fresh pineapple, chopped
1/2 vidalia onion, chopped
2 tablespoons soy sauce
2 tablespoons brown sugar
2 tablespoons cider vinegar
1 cup tomato paste
2 cups brown rice, cooked

Steps:

  • Start the rice according to package directions.
  • Preheat oven to 400°F.
  • Carefully butterfly the chicken breasts with a very sharp knife. Spread open and put into a zip plastic bag with a little water. Pound flat with the back of a cast iron pan or meat mallet.
  • Remove from bag. Put 2 pieces of ham and half of the cheese on each breast. Roll up and secure with toothpicks. Sprinkle with salt and pepper, roll in flour until coated.
  • Heat 2 tbsp of the oil in a cast iron skillet. Add chicken rolls, seam side down, and cook on each side until golden brown. (About 8 - 10 minutes) Put in oven to finish cooking (about 8 more minutes).
  • Meanwhile, heat remaining 1 tbsp oil in medium skillet. Add chopped onion and pineapple. Stir until onion has softened. Add brown sugar, soy sauce, vinegar and tomato paste. Simmer, stirring occasionally until somewhat reduced.
  • When done, cut each chicken roll into diagonal slices. Serve with brown rice and the pineapple sauce.

2 tablespoons soy sauce
3 cups cooked rice or 3 cups noodles
