Gluten-Free Tropical Fried Rice image

How to make Gluten-Free Tropical Fried Rice

Gluten-Free Lime-Soy Sauce
1/3 cup gluten-free soy sauce
1 tablespoon fresh lime juice or rice wine vinegar
1 tablespoon sugar or honey
2 teaspoons toasted sesame oil
1 tablespoon finely grated fresh ginger
Gluten-Free Fried Rice
1 tablespoon high-heat vegetable oil
2 eggs, beaten, optional
1 cup matchstick-cut carrots
1 cup chopped yellow onions
3 cups cold leftover cooked rice
1/2 cup fresh or frozen peas
1 cup chopped green onions with stems
1 cup diced fresh or canned pineapple
1/4 cup chopped fresh cilantro

Steps:

  • In a small bowl, whisk together all sauce ingredients until well combined. Set aside.
  • Heat a wok or large skillet over medium-high heat. Add oil and heat until it shimmers. Add beaten eggs, if using, and cook just until set, about 1 minute. Remove from wok and chop into bite-size pieces. Set aside.
  • Place carrots and onions in hot wok or skillet and sauté 2 to 4 minutes. Add 3 cups cooked rice, breaking up clumps with a spatula so rice heats evenly.
  • Stir in Lime-Soy Sauce to coat rice mixture.
  • Add peas, green onions and pineapple, stirring gently to combine. Cook about 3 to 4 minutes. Stir in cooked eggs, if using.
  • Sprinkle fried rice with cilantro. Serve hot or at room temperature.
