CINNAMON DOLCE ICED COFFEE
Rich, refreshing iced coffee sweetened with the flavors of brown sugar and cinnamon. Divine!

Steps:
- Add all ingredients to a small saucepan and set over medium heat. Cook, stirring occasionally, until heated through and the sugar has dissolved, about 5 minutes. Remove from heat and let sit for 15 minutes. Remove cinnamon stick. Keeps refrigerated in an airtight container for up to 1 week.
- Fill a tall glass with ice cubes. Add coffee concentrate, 2 tablespoons of cinnamon dolce syrup (add less or more depending on your preference), and half and half to desired point of creaminess. Drop in a straw and serve.
HOT OR ICED CINNAMON BUN COFFEE
Similar to a recipe from Aldi's, you can also serve this as a cold or warm coffee. DH doesn't like iced coffees, so now we can both enjoy the cinnamon bun flavor! PS A shot of Kahlua doesn't hurt...

Steps:
- 1. For cold brew coffee, put water, grounds and 1 tablespoon cinnamon in covered pitcher overnight. Next morning, pour through a fine strainer to remove coffee grounds.
- 2. In a glass mixing bowl, whip 1 cup of the cream until stiff peaks form. Add vanilla, 1/4 cup powdered sugar and 1/2 teaspoon cinnamon. Stir to combine. Reserve cinnamon whipped cream in refrigerator.
- 3. Stir together the remaining 1/3 cup heavy cream and 1/4 cup powdered sugar in a small mixing bowl - don't whip!
- 4. Use a carafe or directly in individual ice-filled glasses, pour in cream and powdered sugar mixture and chilled coffee. Garnish with cinnamon whipped cream and sprinkle with remaining 1/2 teaspoon cinnamon.
- 5. For warm coffee: Just brew the coffee right before you serve it, then pour in the flavored cream and add whipped cream topping.
CINNAMON-COFFEE STICKY BUNS
This cheater version starts with store-bought pizza dough, so the time consuming part is already done!

Steps:
- Place oven rack in bottom third of oven.
- Preheat oven to 350°F (180°C).
- Lightly oil an 8-inch (2-L) square baking pan.
- Place raisins in a small bowl and spoon juice overtop.
- Microwave, covered, until hot, 1 minute.
- In a bowl, stir butter with 1/2 cup (125 mL) brown sugar and 1 tbsp (15 mL) each cinnamon and instant coffee.
- Lightly dust counter with a little flour.
- Roll dough into a 6x12-inch (15x30-cm) rectangle.
- Stir raisin mixture into butter mixture.
- Spread over dough.
- Beginning at short side, tightly roll up dough.
- TOPPING:.
- In a large saucepan, stir 1/2 cup (125 mL) brown sugar with 1/4 cup (50 mL) each butter and corn syrup and 1 tbsp (15 mL) instant coffee.
- Bring to a boil over medium heat, stirring often.
- Then let it bubble, without stirring, 2 minutes.
- You want it to turn golden brown but not burn, so watch carefully.
- If it's taking on colour unevenly, gently swirl pan.
- Caramel will be extremely hot.
- Carefully pour into oiled baking pan to evenly coat bottom.
- Sprinkle with pecans.
- Using a serrated knife, cut roll into 6 equal slices.
- Place each roll, cut side down, in caramel coating.
- Bake in bottom third of oven until buns are deep golden, 30 to 40 minutes. Remove and let stand 2 minutes.
- Place a baking sheet on top of pan holding buns.
- Carefully invert onto baking sheet.
- Buns will keep well at room temperature up to 1 day or wrap and freeze.

- Pour hot coffee over cinnamon pieces; cover and let stand about 1 hour.
- Remove cinnamon and stir in cream.
- Chill thoroughly.
- Stir in coffee syrup.
- To serve, pour into ice-filled glasses.
- If desired, top with sweetened whipped cream and sprinkle with ground cinnamon. Use cinnamon sticks as stirrers.
