HONEYDEW MELON SALSA



Honeydew Melon Salsa image

A wonderful topping for salmon or prawns, rice, beans, with chips or all by itself. This salsa is mild, so if you prefer more heat, go right ahead and add it. I prefer honeydew but use your own favorite melon.

Yield 2 1/2 cups salsa

Number Of Ingredients 10

1 1/2 cups honeydew melon, diced
1/2 cup fresh pineapple, diced (for additional flavor, lightly oil and grill the pineapple before cutting it up)
1 teaspoon serrano chili, seeded and minced
1/4 cup red onion, diced
2 tablespoons olive oil
1/2 teaspoon garlic, minced
1 tablespoon raspberry vinegar or 1 tablespoon other fruit vinegar
1 tablespoon fresh lime juice
1/2 teaspoon honey
salt and pepper

Steps:

  • Combine melon, pineapple,chile and onion; whisk oil, garlic, vinegar, lemon juice and honey; pour over fruit mixture and add salt and pepper to taste.
  • Serve immediately or chill.
  • Use within 24 hours.

Yield Makes about 4 cups

Number Of Ingredients 9

1/4 cup fresh lime juice
2 tablespoons (packed) golden brown sugar
3 cups chopped seeded watermelon
1 cup chopped seeded honeydew melon or cantaloupe
1 medium cucumber, peeled, seeded, chopped
1/2 cup chopped red onion
1/4 cup chopped fresh mint
2 tablespoons finely chopped crystallized ginger
2 tablespoons minced seeded jalapeño chilies

Steps:

  • Whisk lime juice and sugar in large bowl until sugar dissolves. Add watermelon and all remaining ingredients; toss gently. Season with salt and pepper. (Can be prepared 2 hours ahead. Cover and chill.)

COLD MELON SALSA

This salsa recipe uses an unusual combination of ingredients - melons, onions, jalapenos, etc. It's a wonderful item to serve at parties as a dip with your favorite taco chips. Also great when eaten with fish, or even as a topping to a salad.

3 tomatoes, seeded and finely diced
½ honeydew melon, peeled and finely diced
1 cantaloupe, peeled and finely diced
1 cup minced red onion
½ jalapeno pepper, minced
½ cup chopped fresh cilantro
3 tablespoons fresh orange juice
½ cup finely chopped almonds
½ teaspoon salt
2 tablespoons fresh lime juice

Steps:

  • In a large serving bowl, stir together the tomatoes, honeydew melon, cantaloupe, red onion, jalapeno and cilantro. Stir in the orange juice, almonds, salt and lime juice. Refrigerate for at least 4 hours before serving for best flavor.

Spicy & Savory Sweet Honeydew Melon image

Mummmm, I had this at my neighbors bbq. It was excellent. I begged for the recipe until she gave it up. It's so simple, I'm sharing it with all of you. Hope you will enjoy it as much as we do. Please note cooking time is chilling time.

Number Of Ingredients 9

1/3 cup water
1/3 cup sugar, white
1/3 cup basil, stems seperated, leaves torn seperated
1 tablespoon red chili, finely chopped
1 tablespoon lemon zest
4 cups honeydew melon, chopped 1-inch pieces
1/2 teaspoon salt, sea
1/4 teaspoon white pepper (optional)
2 tablespoons extra virgin olive oil

Steps:

  • In a small pot boil water and sugar, once boiling, add the basil stems, chili and lemon zest and remove from heat.
  • All the syrup to cool to room temperature.
  • Then you can refrigerate the simple syrup for anywhere 15 minutes or up to 24 hours. The longer it sits the more flavor you will get.
  • Remove the basil stems from the syrup and discard.
  • In a large bowl toss the melon with the chilled syrup.
  • Add the remaining salt, the white pepper if using and the basil leaves, toss gently .
  • Drizzle with olive oil and serve.
