A great chilli to serve for family and friends. Always goes down a treat

Steps:

  • Add the onions to the oil and fry off until translucent and starting to soften. Add the chilli and garlic and fry for a minute or so. Add the beef and brown. Then add all remaining ingredients except the chocolate (and obviousely the rice). Season and cook down until the sauce has thickened. Taste to check the seasoning and if it is hot enough or has enough spices for you. If you want to add more, add a little at a time and cook through for 5 mins or so. When you have the desired heat etc, add 1 square of chocolate at a time. It will melt through quickly, and taste after each square. It will add a depth of flavour which you cannot replicate with anything else. You dont want to taste the chocolate. I have found that 2-3 sqares is enough.
  • For the rice, rinse through well with cold water in a sieve. Put in boiling salted water and stir only once. Leave to cook as per packet instrutcions. Serve with the chilli and some tortilla chips.
  • Tip
  • You must add the chocolate. Really maes the dish, no matter hor odd it seems to some.
