Chicken thighs with honey, mustard, and curry. You will want to be home while this is cooking so that you can baste it occasionally. Produces a delicious sauce that goes well with rice.

10 skinless chicken thighs
½ cup liquid honey
¼ cup prepared mustard
1 teaspoon curry powder
¼ teaspoon salt
½ teaspoon dried tarragon

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Flatten chicken thighs and squeeze tightly into a square baking dish.
  • Combine honey, mustard, curry powder, and salt in a bowl. Spoon over chicken. Sprinkle tarragon on top.
  • Bake, uncovered, in the preheated oven until chicken is no longer pink in the center and juices run clear, about 50 minutes, basting occasionally with the honey-mustard sauce. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

4 skinless chicken breasts
2 tablespoons margarine
1/4 cup prepared mustard
1/3 cup honey
4 teaspoons curry powder
1/4 teaspoon cayenne pepper
1/4 teaspoon cumin

Steps:

  • Melt the margarine in an ovenproof pan.
  • Add honey, mustard, curry powder, cayenne pepper and cumin; mix well.
  • Add the chicken breasts and make sure they are covered by the sauce.
  • Cover and marinate in the refrigerator for 4 hours or more.
  • Preheat oven to 375°F.
  • Remove from refrigerator and bake covered for 10-15 minutes.
  • Remove cover and bake 10-15 minutes more until done and juices run clear.
  • Baking time will depend on the thickness of the chicken breasts.

1/4 cup butter
1/4 cup Dijon mustard
2 tablespoons prepared mustard
1/2 cup honey
2 teaspoons curry powder
2 teaspoons lemon juice

1/8 teaspoon garlic powder or 1 small garlic clove, chopped

Steps:

  • Place chicken in pan (I use a glass one, that snuggly holds the chicken breasts. You don't want the sauce to spread out too much or it may burn at the edges).

½ cup honey
4 teaspoons dry mustard powder
1 teaspoon curry powder
2 teaspoons garlic powder
2 tablespoons soy sauce
2 teaspoons applesauce
4 chicken leg quarters
3 tablespoons butter
2 tablespoons olive oil
⅓ cup water

Steps:

  • Mix together the honey, dry mustard powder, curry powder, garlic powder, soy sauce, and applesauce in a bowl until thoroughly combined, and place the chicken legs into the mixture, spooning the honey mixture all over the chicken to coat.
  • Heat the butter and olive oil in a large skillet over medium heat, and place the chicken into the hot skillet, shaking off excess honey mixture. Retain extra honey mixture in bowl. Puncture a few holes in the chicken legs with a sharp meat fork, and brown the bottom sides of the chicken, about 8 minutes. Pour in water, and turn chicken legs over. Cover, and cook until the chicken meat is no longer pink inside and the juices run clear, 15 to 20 more minutes.
  • Drizzle the chicken with the remaining honey-curry mixture, bring to a boil, and spoon the pan drippings over the chicken to serve.

2 Tbsp brown mustard
2 Tbsp curry powder

  • 1. Place chicken pieces in a baking pan, skin side up. Brush chicken pieces with honey mixture. Bake in 350 oven, brushing chicken with more honey mixture once or twice, for about 40 minutes or until chicken in cooked through and skin is dark brown and crispy. How to make Honey Mustard Curry Chicken

4 tablespoons unsalted butter
1/2 cup honey
2 tablespoons Dijon mustard
2 tablespoons whole-grain Dijon mustard (or use an additional 2 tablespoons of regular Dijon, for a total of 1/4 cup regular Dijon)
1 1/2 teaspoon curry powder
1/2 teaspoon kosher salt
4 medium boneless, skinless chicken breasts (about 2 pounds total)

Steps:

  • Arrange a rack in the middle of the oven and heat to 350°F.
  • Melt the butter in a small skillet over medium-low heat. Add the honey, mustard(s), curry powder, and salt and stir a few times to dissolve the honey and mustard and evenly combine everything. Remove from the heat.
  • Place the chicken breasts in a baking dish where they sit in a single layer. Pour the sauce over the breasts and flip them a couple of times so that they are evenly coated in the sauce. Loosely cover the baking dish with aluminum foil.
  • Bake until an instant-read thermometer inserted into the thickest part of the breasts reads 165°F, 40 to 50 minutes.
  • Remove from the oven, let the meat rest for 5 minutes, covered, then serve the chicken over rice, with plenty of sauce poured over.
