JANSSON'S TEMPTATION image

Yield 6 servings

Number Of Ingredients 6

1 tin (3 1/4 ounces) Swedish anchovies, or regular anchovies
1 cup finely diced onion
1/4 cup butter
3 to 4 large Idaho potatoes
1 1/2 cups light cream
Freshly ground black pepper

Steps:

  • Preheat oven to 350 degrees. Butter a 9x13 inch baking dish. Open the tin of anchovies, take out the fish and reserve the juice. Chop anchovies and set aside. Cook the onion in the butter until translucent and set aside. Wash and peel the potatoes, then drop into a basin of water until ready to use. Drain one potato at a time and cut it into thin slices. Cut the slices into very thin strips (julienne). There should be about three and one-half cups. Working quickly, place the potatoes in a saucepan. Add the cream and immediately bring to a boil. Pour the potatoes and cream into the baking dish and stir in the chopped anchovies. the liquid from the tin, and the chopped onion. Add pepper to taste and bake, uncovered, for 50 minutes to one hour.
