"I developed this subtle soup as a starter for a Southwest-style lunch. I serve it with cheese nachos and follow up with chicken or beef taco salad," says Jessie Gunn Stephens of Sherman, Texas.

1/4 pound bulk pork sausage
1 teaspoon cumin seeds
1/8 teaspoon ground coriander
1/8 teaspoon cayenne pepper
2 cups reduced-sodium chicken broth
3/4 cup canned hominy, rinsed and drained
1 to 2 tablespoons chopped jalapeno pepper
1/4 teaspoon pepper
1 tablespoon minced fresh cilantro

Steps:

  • Crumble sausage into a small skillet. Cook over medium heat for 3-4 minutes or until no longer pink; drain. In a small saucepan, toast cumin seeds over medium heat for 2-3 minutes or until browned. Add coriander and cayenne; cook and stir for 30 seconds. , Add the broth, hominy, jalapeno, pepper and sausage. Bring to a boil. Reduce heat; simmer, uncovered, for 12-15 minutes to allow flavors to blend. Stir in cilantro.

Spicy Sausage Soup with Hominy image

This soup comes together quickly b/c most of the ingredients are canned. It is slightly spicy but you can make it spicier by using hot italian sausage if you desire. If you have never had hominy, this is a good way to try it. It is an interesting addition to soup and has a distinct flavor.

Number Of Ingredients 10

1 lb mild Italian sausage, casings removed
1 medium onion, diced
1 (14 1/2 ounce) can diced tomatoes, undrained
1 (15 1/2 ounce) can black beans, undrained
1 (15 ounce) can yellow hominy, drained
1 can condensed tomato soup
3 1/2 cups water
2 cups beef broth or 2 cups beef bouillon
1 cup of your favorite salsa (optional)
1 teaspoon dried parsley

Steps:

  • Brown sausage in a large Dutch oven or soup pot and drain fat.
  • Add diced onion and cook until tender.
  • Add everything else but the parsley and stir until blended.
  • Bring soup to a boil and then reduce heat to low and allow to simmer for about an hour.
  • Stir in the parsley and season to taste (taste it first, you may not need any additional seasoning).
  • Serve with sourdough breadsticks warm from the oven.
