I'm going through recipes I've collected over the years and posting ones that sound interesting here, so I'll be able to find them later! I don't even remember where this one came from. I've never made it, so prep time is just a guess, but it sounds yummy.

1 9-inch frozen deep dish pie shell
1/2 lb bulk sausage, sage-flavored
1/4 cup yellow onion, chopped
3/4 cup dried cranberries
1 1/2 cups shredded monterey jack cheese
3 eggs, lightly beaten
1 1/2 cups half-and-half
parsley or sage leaf, as garnish

Steps:

  • Preheat oven to 400 degrees.
  • Let frozen pie shell stand at room temperature for 10 minutes.
  • Do not prick the shell.
  • Bake pie shell for 7 minutes.
  • Remove from oven and set aside.
  • Reduce oven temperature to 375 degrees.
  • Crumble sausage, and cook in a large skillet with onion over medium-high heat until sausage is thoroughly cooked.
  • Drain off excess fat.
  • Remove from heat.
  • Stir in cranberries.
  • Sprinkle cheese on the bottom of the pie shell.
  • Top cheese evenly with sausage mixture.
  • Combine eggs and half and half in medium bowl.
  • Whisk until blended but not frothy.
  • Pour egg mixture over sausage mixture in pie shell.
  • Bake for 40-45 minutes or until knife inserted in center comes out clean.
  • Let stand for 10 minutes before serving.
  • Garnish with fresh parsley or sage.

One 14-ounce can whole berry cranberry sauce
1/2 cup BBQ sauce
2 tablespoons low-sodium soy sauce
2 tablespoons Dijon mustard
2 tablespoons honey
1 teaspoon kosher salt
Zest of 1 orange
2 pounds smoked sausage links, sliced on the bias

Steps:

  • In a large saucepan, combine the cranberry sauce, BBQ sauce, soy sauce, mustard, honey, salt and orange zest. Warm over medium-low heat, stirring, until everything is combined. Bring to a low simmer and allow it to bubble gently until slightly thickened, 5 to 7 minutes.
  • Add the sausages to the pan and stir. Allow the sausages to warm through, about 5 minutes. Transfer to a chafing dish or warming dish. Serve with toothpicks on the side.

Found this recipe a long time ago at the Bob Evans website. I made 5 quiches for my Thanksgiving guests and this was voted the #2 favorite.

1 9-inch frozen deep dish pie shell
1/2 lb bob evans savory sage roll sausage (i use jimmy dean hot & spicy)
1/4 c chopped yellow onion
3/4 c dried cranberries
1 1/2 c shredded monterey jack cheese
3 eggs, slightly beaten
1 1/2 c half and half
fresh sage, for garnish

Steps:

  • 1. Preheat oven to 400F.
  • 2. Let frozen pie shell stand at room temperature 10 minutes; do not prick the shell. Bake 7 minutes. Remove from oven and set aside.
  • 3. Reduce oven temperature to 375F. In large skillet, crumble and cook sausage and onions over medium-high heat until sausage is browned. Drain off drippings. Remove from heat and stir in cranberries.
  • 4. Sprinkle cheese on bottom of pie shell, then evenly cover with the sausage mixture. In medium bowl, combine eggs and half and half; whisk until mixed but not frothy. Pour egg mixture over top of mixture in pie shell. Bake 40-45 minutes or until knife inserted comes out clean.
  • 5. Let stand 10 minutes before serving. Refrigerate leftovers.
