Italian Bread-Bread Machine/Oven image

I got this recipe from the book that came with my bread machine. I use the machine to do the work, then I put it in loaf pans and bake it off in the oven. This is a wonderful, tasty fresh bread.

1 3/4 c water (100°-115°)
3 Tbsp water
1/4 c oil
2 1/2 tsp salt
5 Tbsp sugar
1/4 c powdered milk or powdered buttermilk
5 c flour
3 tsp active dry yeast

Steps:

  • 1. Place 1 3/4 c. plus 3 tablespoons of water (I just use very hot tap water) and oil in machine pan. In a bowl sift 5 c. of flour, add salt, sugar, and powdered milk. Pour into bread pan. Make small indention on top of flour and add yeast.
  • 2. Use DOUGH cycle if you wish to cook the bread in the oven. (Other use cycle designated to bake bread).
  • 3. Once dough has mixed, kneaded, rested, and risen, bring out onto lightly floured surface, cut in half. Place in two bread loaf pans that have been sprayed with non stick spray oil. Brush top of loaves with butter or olive oil, or spray with spray oil. Bake 375° for 35-40 min.
  • 4. Cast Iron skillet method: Once dough has risen in machine, remove and place in a 13" greased skillet, cover, let rise until doubled in size. Bake 375° for 33 min. Sprinkle coarse sea salt on top before baking if desired.
