Steps:
- Heat oven to 325°. Toss potatoes, bell pepper, onion, 2 tablespoons cheese, the salt and pepper. Pour butter and oil into rectangular pan, 13x9x2 inches; tilt pan to cover bottom. Spread potato mixture in pan.
- Bake uncovered about 45 minutes, stirring once, until golden brown. Sprinkle with additional cheese before serving.

This is so yummy. It's great to help use up leftover ham from the holidays.I also sprinkle seasoned salt on the potatoes before adding to the mixture. You don't have to, sometimes the ham can be salty. Also, I have used crushed Ritz crackers on top instead of the corn flakes.

- 1. Heat oven to 375. Mix the soup, sour cream, onions, and ham together in a large bowl. Add the potatoes to this mixture. Spread into an ungreased 9x13 baking dish. Combine the butter and corn flakes and sprinkle over the top. Bake for 60 minutes.
