⅓ cup vegetable oil
2 cups quick cooking oats
½ cup light brown sugar
¼ cup light corn syrup
½ teaspoon salt
1 ½ teaspoons vanilla extract
1 cup semisweet chocolate chips, melted
¼ cup chopped nuts

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Generously grease an 8 or 9 inch square pan.
  • In a large bowl, stir together vegetable oil and oats. Mix in brown sugar, corn syrup, salt, and vanilla. Press mixture into prepared pan.
  • Bake for 12 minutes in preheated oven. Set aside to cool.
  • Cut into 4 large squares to remove from pan. Cover with melted chocolate, and sprinkle with nuts, if desired. Allow the chocolate to cool, and then cut each square into 9 pieces.

1/3 cup butter or 1/3 cup margarine, melted
2 cups quick-cooking whole grain oats
1/2 cup light brown sugar, packed
1/4 cup light corn syrup
1/2 teaspoon salt
1 1/2 teaspoons vanilla extract
1 cup semi-sweet chocolate chips
1/4 cup chopped walnuts (optional)

Steps:

  • Preheat oven to 400 degrees.
  • Grease well an 8" square glass baking pan; set aside.
  • In a large bowl, combine well the melted butter and oats; stir in the brown sugar, corn syrup, salt and vanilla extract. Pour into prepared pan and press in evenly.
  • Bake for 14 minutes. Remove pan and turn off oven .
  • Sprinkle the chocolate chips over the top and return the pan to the oven for 2 minutes.
  • Using a sprayed offset spatula, spread the softened chips over the top; sprinkle with the chopped nuts.
  • Allow to cool to room temperature and then refrigerate for 2 hours.
  • With a sharp thin knife, go around all the edges of the pan. Gently remove the whole from the pan and place on cutting board. Cut into squares and then triangles.
  • These are best stored in an airtight container in the fridge during warm weather.
