This entree is easy and delicious, and made healthier by using Jarlsberg cheese (instead of Swiss) and whole wheat bread crumbs.

4 skinless, boneless chicken breast halves
¼ teaspoon salt
⅛ teaspoon ground black pepper
6 slices Jarlsberg cheese
4 slices cooked ham
¼ cup whole wheat bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Coat a 7x11-inch baking dish with nonstick cooking spray.
  • Pound chicken breasts to 1/4-inch thickness. Sprinkle each piece of chicken on both sides with salt and pepper. Place one cheese slice and one ham slice on top of each breast. Roll up each breast and secure with a toothpick. lace in baking dish and sprinkle chicken evenly with bread crumbs.
  • Bake in preheated oven until chicken breasts are no longer pink in center and juices run clear, 30 to 35 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Remove from oven and place 1/2 cheese slice on top of each breast. Return to oven and bake until cheese is melted, 3 to 5 minutes. Remove toothpicks and serve immediately.

6 skinless, boneless chicken breast halves
6 slices Swiss cheese
6 slices ham
3 tablespoons all-purpose flour
1 teaspoon paprika
6 tablespoons butter
2 tablespoons lemon juice
1 teaspoon chicken bouillon granules
1 tablespoon cornstarch
1 cup fat free half-and-half

Steps:

  • Pound chicken breasts to 1-inch thickness. Place a Swiss cheese and ham slice on each breast, within 1/2-inch of edge. Fold edges of chicken over filling and secure with toothpicks. Mix flour and paprika in a small bowl, and coat chicken pieces.
  • Heat butter in a large skillet over medium-high heat and cook chicken until browned on all sides, about 3 minutes each side. Add lemon juice and chicken bouillon. Reduce heat to low, cover, and simmer until chicken is no longer pink and juices run clear, about 30 minutes.
  • Remove toothpicks and transfer breast to a warm platter. Blend cornstarch and half-and-half in a small bowl. Whisk slowly into skillet, cooking and stirring until thickened, about 3 minutes. Pour over chicken and serve warm.

1 garlic clove crushed
2 Tbsp butter melted
1/3 c fat free chicken broth
1/2 c bread crumbs
2 Tbsp pamigiano-reggiano cheese( parmesan chees)
1 tsp paprika
4 boneless chicken breast halves
1/4 tsp salt
1/4 tsp oregano
1/4 tsp black pepper
4 thin slices of prosciutto ham
1/3-1/2 c reduced fat part skim mozzarella cheese
cooking spray

Steps:

  • 1. Heat oven to 350 degree's Put broth in microwave and heat for 30 seconds.Stir in butter and garlic set aside
  • 2. Combine bread crumbs,Parm cheese,and paprika in medium bowl,and set aside.
  • 3. place a chicken breast 1 at a time in a gallon size ziploc bag or between to sheets of plastic wrap and pound with mallet un 1/4 inch thick.
  • 4. Sprinkle all sides of chicken with salt,pepper,and oregano.Top each breast with the Prosciutto ham,and a 1/4 of the Mozzarella cheese.Roll up chicken pieces like a jelly roll.
  • 5. Dip the rolled up chicken in the broth mixture.Dredge in bread crumb mixture. Pour remaining broth over chicken. bake for 30 minutes,or until done
