I remember making this sauce for my mom when I was about 8 years old. I loved the aroma and spicy flavor. Today, many cooks spread cream-cheese frosting on spice cake instead, but I think you're really missing something if you bypass this warm, old-time sauce. -Shirley Joan Helfenbein, Lapeer, Michigan

1 cup sugar
2 tablespoons all-purpose flour
1/4 teaspoon ground nutmeg
Dash ground allspice
1 cup cold water
2 tablespoons butter
1 teaspoon vanilla extract
1/4 to 1/2 teaspoon rum extract

Steps:

  • In a small saucepan, combine the sugar, flour, nutmeg, allspice and water until smooth. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in butter and extracts. Serve with spice cake. Refrigerate leftovers.

1/2 cup (1 stick) butter, melted
1 teaspoon pure vanilla extract
1 egg, beaten
1/4 cup brandy
Pinch grated nutmeg
Pinch orange zest

Steps:

  • Mix together the sugar, butter, vanilla and egg in a saucepan set over medium heat. Cook, stirring, until the sugar melts. Add the brandy and stir for 1 minute. Add the nutmeg and orange zest, and serve warm.

2 tablespoons lemon juice
1 dash salt
1 cup sugar

Steps:

  • Cream butter and salt.
  • Add egg sugar and cream until fluffy.
  • Add egg and beat rapidly until well blended.
  • Gradually add lemon juice and rind and continue beating.
  • Cook until thickened.
  • This a nice topping for most any steamed pudding.

6 to 8 tablespoons confectioners' sugar
1 tablespoon (or more, to taste) cognac, rum, Scotch, Irish whiskey, or any other spirit

  • Cream the butter and sugar together thoroughly. Beat in the spirit, a little at a time, until the mixture is quite smooth. Serve by spoonfuls over individual slices of pudding.

Brown Sugar Hard Sauce image

Yield Makes about 1 3/4 cups

Number Of Ingredients 5

1/3 cup (packed) golden brown sugar
4 tablespoons dark rum
1 tablespoon grated tangerine or orange peel
1 cup (2 sticks) unsalted butter, room temperature
1/2 cup powdered sugar

Steps:

  • Stir brown sugar and 3 tablespoons rum in heavy small saucepan over medium-low heat until sugar dissolves. Mix in tangerine peel. Cool to room temperature.
  • Using electric mixer, beat butter in medium bowl until light. Add remaining 1 tablespoon rum, brown sugar mixture and powdered sugar and beat until well blended and smooth. (Can be prepared 1 week ahead. Cover and refrigerate. Bring to room temperature before serving.)
