Mom's Meatloaf image

I love meatloaf and I especially liked it when my Mom made it. I like to make a sandwich out of the leftovers the next day....mmmm delicious. These web photos are ideas of how the finished product looks.

MEATLOAF:
2 lb ground beef (beef and pork mix or turkey)
1 medium onion chopped
1 bell pepper, chopped
1 c celery, diced
1 small can evaporated milk
2 eggs, slightly beaten
1 sleeve saltine crackers, crushed
1 small can tomato sauce
1 small can tomato paste
1/2 tsp salt
1/2 tsp ground black pepper
GLAZE:
1/3 c dark karo syrup
1/2 c ketchup
1/4 c brown sugar

Steps:

  • 1. In a large bowl, combine meat, onion, bell pepper, celery, tomato sauce, tomato paste, salt and pepper. Mix thoroughly with your hands.
  • 2. In a separate bowl, combine the eggs and canned milk. stir well to combine.
  • 3. Pour this mixture into the meatloaf mixture and mix thoroughly with your hands. Add enough cracker crumbs to make the mixture stick together.
  • 4. In a separate bowl, combine the ingredients for the glaze and stir until well combined.
  • 5. Mold the meat into 2 loaf pans or 1 similar deep dish casserole dish. pour the glaze on the top of the meatloaf. Cover with aluminum foil and bake at 350F for about 1 1/2 hours.
  • 6. After the meatloaf bakes for 1 hour, remove it from the oven, drain some of the liquid from the pan and put it back into the oven, uncovered, and finish baking.
  • 7. This can even be baked in muffin tins. Split the meat into equal portions and put them in your muffin tin and bake for @ 40 to 45 minutes. Makes 14 - 16 "muffin" meatloaves. The kids love this that way.
