I found a recipe for Pineapple Sandwiches on white bread that was far too sweet. I put some ham on it, and put it on whole grain bread for a slightly healthier alternative that is not nearly so sweet!

1 (15 ounce) can crushed pineapple, drained
1 cup white sugar
1 cup chopped walnuts
1 (8 ounce) package cream cheese, softened
2 tablespoons milk
24 slices whole-grain bread
60 thin slices deli ham

Steps:

  • In a saucepan, combine the pineapple and sugar. Bring to a boil, then cook over medium heat, stirring constantly, until thickened, 5 to 10 minutes. Remove from the heat and cool. When cool, stir in the walnuts.
  • In a medium bowl, stir cream cheese to soften, then stir in enough milk to make it easy to spread. Blend in the pineapple mixture. This part can be made the day before if you like.
  • Spread about 2 tablespoons of the pineapple mixture onto one side of 12 slices of bread. Top each one of these with 5 thin slices of ham. Top with remaining bread slices.

2 cans (20 ounces each) unsweetened crushed pineapple, undrained
1 medium onion, finely chopped
3/4 cup packed light brown sugar
1/4 cup Dijon mustard
2-1/2 pounds thinly sliced deli ham
2 tablespoons cornstarch
2 tablespoons water
10 slices Swiss cheese or cheddar cheese, optional
10 kaiser rolls, split

Steps:

  • Mix first 4 ingredients. Place half the mixture in a 5-qt. slow cooker; top with half the ham. Repeat layers. Cook, covered, on low until heated through, 3-4 hours., Using tongs, remove ham from slow cooker, leaving pineapple mixture behind; keep warm. In a large saucepan, mix cornstarch and water until smooth. Stir in pineapple mixture; bring to a boil. Reduce heat; simmer, uncovered, until mixture is slightly thickened, stirring occasionally. Serve ham, pineapple mixture and, if desired, cheese on rolls.

4 slices bread (thick slices)
1/4 lb swiss cheese, shredded (divided into four portions)
2 slices cooked ham
1/2 cup crushed pineapple, well drained (divided into 2 portions)
butter, room temperature

Steps:

  • Prepare a large skillet or cast-iron skillet.
  • Place two slices of bread on a work surface.
  • Cover/sprinkle each of the two slices with one portion of cheese, then one slice of ham, then one portion of pineapple.
  • Finish with the second portion of cheese.
  • Top each sandwich with a slice of bread.
  • Melt butter in a hot skillet.
  • Add the two sandwiches to the skillet; cook until cheese is beginning to melt and the undersides are golden.
  • Butter the tops of the sandwiches, using a spatula carefully turn them over.
  • Cook until the cheese is fully melted and the undersides are golden.
  • Let stand for about 2 minutes before slicing.

My mom thinks these might be more '60s than '80s, but they sound '80s to me, so here they are. These open-faced grilled cheese sandwiches are easy to make and sure to get a comment or two from your friends.

Yield makes 24 pieces

6 slices white bread
6 slices ham
6 pineapple rings
6 slices Swiss cheese

Steps:

  • Preheat the broiler to high.
  • Place the bread on a baking sheet and place under the broiler for 2 to 3 minutes on each side, or until lightly browned. (This can also be done in a toaster.) Place a piece of ham on each piece of bread and top with a pineapple ring and a piece of cheese. Place the pan under the broiler and cook for 5 minutes, or until the cheese is melted and begins to brown. (Watch them carefully because they can go from brown to black quickly.) Remove the pan from the broiler, cut each sandwich diagonally into 4 pieces, and place on a serving platter.
