ALASKAN HALIBUT AND SALMON GEFILTE FISH TERRINE

- Preheat the oven to 325 degrees. Cut the fish into large chunks, and place in the bowl of a food processor. Pulse about 20 times: do not puree, but grind fine. Place in the bowl of an electric mixer.
- Heat oil in a large frying pan, and saute onions until soft and transparent. Let cool.
- To the fish mixture, add the onions, eggs, 2 cups of cold water, matzoh meal, salt, white pepper, sugar and lemon juice. Beat in an electric mixer at medium speed for about 10 minutes. Add the dill, and grate in the carrots; mix well, using a paddle attachment.
- Pour the mixture into a greased 12-cup bundt pan. Smooth the top with a spatula, and cover with foil. Place in a larger pan filled with water that is almost boiling.
- Bake in the oven for 1 hour, or until the center is solid. Cool for 5 minutes, or until mold is cool to the touch. Run a knife around the edges. Place a flat serving plate on top, then flip over, inverting onto the plate. If the mold doesn't come out easily, give the plate a shake. You should feel or hear it give.
- Refrigerate for several hours or overnight. Slice as you would a torte, and serve as an appetizer. Garnish with the parsley and remaining dill, and serve with red horseradish.

Plan ahead the salmon will need to marinade for at least 8 hours, this marinade is enough for up to 16 ounces of salmon- you may adjust the fresh garlic and cayenne pepper to taste --- you will LOVE this!

- In a large bowl whisk the first 10 ingredients until well blended starting with 1/2 teaspoon black pepper.
- Season with salt if desired.
- Mix in the minced garlic and green onions.
- Pour over salmon.
- Cover and refrigerate for 8-24 hours, turning the salmon over a few time during chilling.
- Discard the marinade and grill salmon over medium-high heat (about 4 minutes per side).
HONEY-DIJON- DILL SALMON MARINADE
This is a great easy marinade for Salmon. My sister-in-law made it for us and we all loved it. Note that the cooking time depends on the size and thickness of the salmon filet, you will just have to watch carefully. Prep time includes marinade time.

- Mix Olive oil, honey, Dijon mustard and garlic together.
- Sprinkle dill on the front and back of the salmon filets.
- Marinate the dill-sprinkled salmon for at least 2 hours, turning occasionally.
- Preheat oven to 350.
- Cook marinated salmon for 12-20 minutes, once again depending on the size of the filets, watch carefully.

ALASKAN SALMON MARINADE
"Secret" recipe from the best steakhouse in Cordova, Alaska! This makes almost any kind of salmon palatable (except for pinks). Requires only 30 minutes marinating time. Makes a huge batch of marinade - would probably cover two huge fillets. You could try making half... (I use dried parsley and it tastes great.)

Steps:
- Rinse fillets and pat dry.
- Place gallon-size ziploc bag in an empty pitcher, folding top edges over mouth of pitcher.
- Combine all ingredients inside ziploc bag.
- Add fillets, squeeze air out of the bag. Gently mush the ingredients together and onto the fish.
- Let marinade and fish set for 30 minutes.
- Remove fish from marinade; discard leftover marinade.
- Grill or broil as desired.
