- Preheat oven to 375°. Place halibut in a greased 13x9-in. baking dish. Combine sour cream, cheese, butter, dill, salt and pepper; spoon over halibut. , Cover and bake for 20 minutes. Uncover; sprinkle with paprika. Bake until fish just beings to flake easily with a fork, 10-15 minutes.

Steps:
- Season halibut fillets with salt and pepper.
- Melt butter in a skillet over medium heat; add onion. Cook and stir until translucent, about 5 minutes. Add wine; simmer until slightly reduced but still juicy, about 5 minutes. Pour mixture into the bottom of a baking pan. Place seasoned halibut on top.
- Preheat oven to 350 degrees F (175 degrees C).
- Combine sour cream, mayonnaise, garlic, seafood seasoning, white pepper, paprika, and dill in a bowl. Season with salt. Pour on top of halibut. Sprinkle green onions, panko, and capers on top.
- Bake in the preheated oven until the fish flakes easily with a fork, about 15 minutes.

I credit this recipe to a deceased friend who had a knack for creating great meals. This is my favorite way to eat halibut and great dish to serve with crusty bread and salad for a company-ready meal.

- Preheat the oven to 350 degrees F (175 degrees C).
- Grease the inside of a 9x13-inch baking dish with butter.
- Place halibut in the prepared baking dish.
- Mix sour cream, green onions, butter, salt, white pepper, and dill in a bowl.
- Spread sour cream mixture over halibut.
- Bake halibut in preheated oven until fish flakes easily with a fork, 20 to 25 minutes.
- Remove halibut from the oven and sprinkle with Parmesan cheese.
- Place oven rack about 6 inches from broiler heat source and turn on oven's broiler.
- Place under preheated broiler and broil until cheese is lightly browned, 2 to 3 minutes.

- Place butter and onion on a double thickness of heavy-duty foil (about 34 in. x 18 in.). Cut fish into serving-size pieces, removing and discarding the bones. FISH AND SOUR CREAM BAKE
Although the original recipe calls for Halibut, I've found that any firm, white fish will work. If your fish is frozen, soak it in milk to help remove the frozen "fishy" taste. This is an easy recipe that comes together fast. Except for the fish, most people will have all the other ingredients on hand. I love this after a hard work day....quick, easy, and delicious! Original recipe is from the "Reflections of the West" cookbook, but I've made a few changes.

- Cut the fish in half to make 4 servings.
- Mix 1 tbsp water and 1 tbsp lemon juice. Brush the mixture on both sides of the fish. Sprinkle with a little salt and pepper (Remember, there will be salt and pepper in the sour cream topping).
- Arrange the fish in a lightly greased 11 x 7 x 1/2 inch baking dish. Bake uncovered at 450 degrees for 12 to 15 minutes or until the fish flakes easily when tested with a fork.
- While the fish is cooking, combine the sour cream, mayonnaise, green onions, 1 tsp lemon juice, 1/4 tsp salt, and 1/8 tsp ground red pepper. Once the fish flakes easily, spoon the sour cream mixture evenly over the fish.

- Serve immediately.

Living on the coast in Alaska insures you have abundant fish. Halibut is one of my favorite options. It is a firm but mild white fish. This is one of the easy, quick recipes that my family loves. Almost every Alaskan has their own version of this recipe. I like to serve this with rice.

- 1. Coat halibut with cracker crumbs and place in a greased 9x13 inch baking dish in a single layer. Cover with shredded cheese.
- 2. Mix sour cream, mayonnaise and onion together (I add salt and pepper to taste) and spread over the cheese layer. Try to completely cover the cheese in order to seal in the moisture of the fish.
- 3. Bake at 500 degrees F. for 20 minutes.
