BEEF AND HORSERADISH SAUCE SANDWICH
Steps:
- Preheat the oven to 500 degrees F.
- Place the beef on a baking sheet and pat the outside dry with a paper towel. Mix the unsalted butter and mustard together in a small bowl and spread the mixture over the beef with your hands. Sprinkle evenly with the salt and pepper. Roast in the oven for exactly 22 minutes for rare and 25 minutes for medium-rare.
- Remove the beef from the oven, cover it tightly with aluminum foil, and allow it to rest at room temperature for 20 minutes. Remove the strings and slice the fillet thickly.
- To make the sandwiches, cut the bread into 1/4-inch thick slices. Spread 4 of the slices thickly with the Mustard Horseradish Sauce. Top with slices of beef and arugula and sprinkle with salt and pepper. Spread 4 more slices of bread very lightly with butter and place, butter side down, on top of the beef.
- Whisk together the mayonnaise, mustards, horseradish, sour cream, and a pinch of salt in a small bowl. Serve at room temperature.

GRILLED ROAST BEEF WITH HORSERADISH CREAM SAUCE RECIPE
A roast beef has been on my grilling to-do list forever, but sticker shock for rib roast or full tenderloin (my preferred cuts) has really been a setback-a special occasion price for a time that just never seemed to come. Instead of waiting it out, it was time to take a more frugal approach with beef eye round.

- Pat beef dry with paper towels. Brush all over with olive oil then season liberally with salt and pepper.
- In a small bowl, combine rosemary, thyme, and parsley. Sprinkle all sides of roast with herb mixture, using hands to pat into beef. Wrap beef tightly in plastic wrap and refrigerate overnight.
- Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place beef on the hot side of the grill and cook until well browned on all sides, about 10 minutes.
- Move beef to aluminum roasting pan and place on cool side of the grill, cover, and cook until an instant read thermometer inserted into the thickest part of the beef reads 125 for medium-rare or 130 for medium, about 40 to 60 minutes more. Remove from grill to carving board and let rest for 15 minutes. Carve and serve with horseradish cream sauce.

This recipe came as an accident in an attempt to clean out the fridge. I love hot roast beef sandwiches with horseradish cheddar cheese. I opened the fridge and knew I needed to use that Naan (flatbread), but I wanted a sandwich. Then everything just fell into place...I said, "carmelized onions would be great!" Then I was sad...

Steps:
- 1. Slice onions and caramelize in butter and olive oil. Remove with a slotted spoon to a bowl.
- 2. Grate horseradish cheddar and rough chop peppers.
- 3. Lightly spread mustard on Naan. Layer roast beef slices, then onions, grated horseradish cheddar, top with peppers.
- 4. Place on a preheated barbecue grill (350). Turn after a few minutes to get good grill marks on the bottom and get a crispy, "wood oven-like" crust. WATCH it carefully....keep the heat low and move so as not to burn the bottom. When cheese is melted and is heated through, remove to plates.
