SHRIMP CORN CAKES WITH LIME SAUCE image

Number Of Ingredients 12

2 Large eggs
2C chopped cooked shrimp
1C finely chopped kernel corn
4T all-purpose flour
4T cilantro
4T yellow cornmeal
2T sour cream
1tsp seasoned salt
4T butter (for cooking)
4tsp lime juice
3tsp minced chipotle pepper in adobo sauce
1/3 cucumber, cut into triangles (for garnish)

Steps:

  • Whisk egg until frothy. Stir in next 7 ingredients to form a thick batter. Melt 1tsp butter in lg frying pan on Med heat. Drop 1T portions of batter. Cook 1-2 minutes per side until golden. Transfer to serving platter and keep warm in oven at 200F. Repeat with rest of batter, adding butter in between to prevent sticking. combine chipotle pepper and lime juice. Top each cake with a small dollop of sour cream, a drizzle of chipotle, and a cucumber triangle. Serve immediately.
