Open-Faced Bell Pepper and Fontina Grilled Cheese image

Open-face sandwiches make an easy lunch for a crowd.

4 yellow bell peppers
1 tablespoon white wine vinegar
1/4 cup extra-virgin olive oil
Coarse salt and freshly ground pepper
1 tablespoon unsalted butter
1 baguette, halved lengthwise
6 ounces fontina cheese, grated (about 2 cups)

Steps:

  • Preheat broiler. Place peppers on a baking sheet; broil, turning occasionally, until blackened all over, about 10 minutes. Leave broiler on. Transfer peppers to a bowl; cover with plastic wrap. Let cool. Remove skin, stems, and seeds; discard.
  • Cut peppers into 2-inch strips; transfer to a medium bowl. Drizzle with vinegar and 3 tablespoons oil; season with salt and pepper. Set aside.
  • Melt butter with remaining tablespoon oil. Brush over cut sides of bread. Broil until top edges are just golden.
  • Arrange peppers over bread. Top with cheese. Broil until cheese has melted and is bubbling, 1 to 2 minutes.

1/4 cup extra virgin olive oil
1 rosemary sprig, leaves
2 slices sourdough bread, each 1/2 inch thick
1 ounce thinly sliced tuscan salami
1 ounce sliced Fontina cheese
1/4 cup sliced roasted red pepper

Steps:

  • In a small saucepan over medium heat, warm the olive oil.
  • Add the rosemary and fry until just fragrant, about 20 seconds.
  • Remove from the heat and let cool.
  • Preheat an electric panini maker according to the manufacturer's instructions.
  • Brush one side of each bread slice lightly with the rosemary oil.
  • Lay a bread slice, oiled side down, and arrange the salami and cheese on the bread. Add the bell peppers and top with the other bread slice, oiled side up.
  • Place the sandwich on the preheated panini maker and cook according to the manufacturer's instructions until the sandwich is hot throughout, golden and crispy.
  • Transfer the sandwich to a cutting board and cut in half.
  • Serve immediately.
  • Serves 1.

1/2 cup chopped onion
1/2 cup chopped green pepper
1/2 cup chopped sweet red pepper
2 teaspoons chopped seeded jalapeno pepper
4 slices rye bread with caraway seeds
3/4 cup shredded Monterey Jack cheese
1 tablespoon butter, softened

Steps:

  • In a skillet, heat oil over medium-high heat; saute onion and peppers until tender. Divide between 2 bread slices. Top with cheese and remaining bread. You can really mix and match any meats and cheeses, but to me, there is no comparison to good ol' salami and american cheese!!

2 slices bread
butter
1 slice American cheese
5 slices salami
mayonnaise
lettuce
tomatoes

Steps:

  • Butter one side of each slice of bread and place (Buttered side down) in a skillet over medium heat.
  • Place the slice of cheese on one of the pieces of bread, and allow to the cheese to melt, and the bread to turn golden.
  • Remove from pan and top cheese with salami, making sure to spread out the layer of salami to cover everything.
  • Add the tomatoes and lettuce.
  • Spread Mayo on the unbuttered side of the other slice of bread and top off the sandwich!
  • YUM!

4 oval slices pumpernickel bread
4 teaspoons Dijon mustard
3 ounces thinly sliced Genoa salami
a 7-ounce jar roasted red peppers, drained and patted dry on paper towels
1/4 pound Fontina cheese (preferably Italian), sliced thin

Steps:

  • Preheat broiler.
  • On a baking sheet toast both sides of bread about 3 inches from heat until surface is crisp and spread one side with mustard. Divide salami among toast and top with roasted peppers. Cover peppers with Fontina and broil sandwiches until cheese is melted, about 1 minute.
